Customers: Go here! The food is great! I know it does not smell like a bakery which makes you think they truck the food in, but they do not. They make it in that same building and sometimes you can see them working. Yes, I wish they had fresh bread samples or some "right out of the oven" products as that would be great. Also, having an itemized receipt is not a bad idea. Finally, try the Pre-Order option on their website, but you have to do it in advance!
Owner: As soon as you open, please sit in the corner (drink some of your great coffee) and observe your store from three distinct perspectives: consumer, employee and owner.
Consumer Perspective: I was there 6 min after it opened and the line was 8 people deep. Congratulations as that is awesome! What is not awesome is how poorly the storefront is run. I left your store with my items (all in stock) 36 minutes later. (All of the items I bought were ready to go--no sandwiches, etc). It takes way to long to get to the front of the line. When I am there I am greeted by a friendly lady who grabs the items I specify and puts them on a table to her right. She then picks up all of the items again and puts them on a table behind her. She then assembles a box and puts all the items inside. She then moves the box from that table to the right of the coffee making station where there is yet another line of boxes--only these ones are finally waiting to be rung up. Then another person opens the box (again) and rings it up. It is so frustratingly inefficient and kind of weird how many people (greeter, coffee barista, and check out person) touch the box/products. There is no efficiency of motion.
Employee Perspective: You are a good employer. I see the same faces there for the last several years. However, the 10 x 10 area behind the register is a battlefield and this is an area where you could improve for your employees. You usually have two greeters, one barista, people constantly coming and filling up the cabinet, plus a few others mulling about. The employees must hate this because they keep bumping into each other and there is no workspace. It is inefficient and cumbersome.
Owner Perspective: You owe it to yourself to improve your business in this area. It would increase profits and keep your employees and customers happier.
Ideas: Maybe use the Pre-Order to allow same day pick up? Please advertise the Pre-Order idea more! Perhaps, do not stock the display cabinet (realtime) and instead prepare the items to go (pastries in a box) in the Pre-Order area. This would stop additional "reloader" employees from coming inside the checkout area. Perhaps, give a barcode reader to the Greeter which prints tickets out in the Pre-Order area and then the customer picks up the box of goodies at the Pre-Order window? Perhaps, a drive through would be of assistance (using the window in the North west corner or on the west wall of the Pre-Order area). Maybe a seperate line for "throw in a box" items as opposed to custom sandwiches, etc.? Maybe have a pickup window/area installed on the bakery side (southeast corner) of the front of the building?

I've been going to Baked for about 3 years now and I've been a huge fan. Genuinely recommending it to people in and around Granbury since my first visit as the main place to check out while you're there. However, this year has had a lot of concerning trends I've experienced with Baked, and my recommendations have begun to falter with it.
Most concerning: I no longer order breakfast or lunch from their kitchen, as while the food has been fantastic, I've found a persistent trend starting this year of my dishes having something rotten or past its prime included. Not always, but often enough I'm uncomfortable ordering from them. When it's good, it's great, but this inconsistency is too much for me to feel comfortable ordering these items.
In mild concern: I feel the pastries have had a weird consistency in quality. For example: croissants are without a doubt the VIP item of Baked. I will be so bold as to say they are on the level or even surpass some of the croissants I've had from French or high end American bakeries. That being said, maybe there's been a shake up on the team that makes them, a change in process, or something, I don't know. But they're just a little bit...less than they used to be in previous years. It's hard to define, but maybe less well worked? Still a quality product, but something has definitely changed for the worse in my opinion. Meanwhile, some other goods I used to be okay with have improved. Items like their cinnamon rolls have a better consistency in cinnamon filling to dough for example. It shows the bakery clearly still has its talent and passion in some areas, but feels faltering in others. Also, the cakes and cupcakes I just do not like. Something about the buttercream as well as the ratio of icing to cake. I feel there's much better places to get those.
Good stuff: The baked bread products remain superb! My favorite baguettes I've ever had, and the bagels are divine. Whoever is handling that, keep it up. You're doing amazing work.
Overall, I think Baked is still one of my top recommendations in Granbury, but I have more caveats than I used to. I hope they continue to grow and improve, and I look forward to seeing how their Glen Rose...
