As good as their restaurant design and location is, it is the quality of their smoked meats and fantastic sides (and accompanying service) that is gonna keep people coming back again and again and again. I wanted to try a little bit of everything – but I can only eat so much in one sitting. So I guess I’ll just have to go back again and eat the rest of the menu (and then again and again and again). I’ve had their “Candied Ends” before at the farmers market, so I just got some of those to go — but FWIW, holy cow they are soooo good!!! On this first visit I ordered some moist brisket, sausage and pork ribs, with two sides – what they call “Casa Corn” (more about that in a minute) and their “Southern Slaw” coleslaw. Justin lives by a very important principle in everything he makes – if he doesn’t like it or he wouldn’t eat it, he won’t put it on the menu or serve it to his customers. So that guides his recipes and how he preps and cooks every cut of meat and every side that they serve. There is a great deal of love and detail that goes into everything they do.
Brisket – I had Justin cut me some moist brisket, with a really healthy amount of bark right off the end. And oh man was it good! He is very aggressive in trimming his briskets (his experience working at a certain chain barbecue joint taught him a whole bunch about good and bad practices in prep’ing and cooking smoked meat). And that doesn’t come cheap – remember these awesome folks pay per pound pre-cooked weight for their meat; and a well-trimmed brisket will lose 50-60% (or more) before it gets sliced and served. The fat was perfectly-rendered. There was a great smoky flavor without being overpowering – the beefy flavor of the meat comes through very nicely. There is a nice-looking smoke ring and the bark is gnarly and delicious. There’s not a thing to complain about with the brisket I was served. It was absolutely outstanding. Sausage – Right now Bexar is smoking an absolutely delicious pepper jack sausage that they source from Ruffino Meats out of Bryan. However, as the restaurant gets up on plane, this dynamic duo already has the equipment and the know-how to begin doing their own sausages. The sausage I enjoyed was expertly-smoked. It had just the right snap to the casing and fantastic flavor. I’m really looking forward to the house-made sausages that will be coming from Bexar in the future. Justin is very excited to get there, as he has some very good memories of making sausage with his grandfather growing up on the farm in San Antonio. I can’t wait for their sausage game to begin! Pork ribs – The St. Louis style spareribs were excellent as well. The rub, mop and glaze were very nice, with just a hint of sweetness mixed in with the salt-n-peppery rub. They were well-cooked and just at the point of falling off the bone, but without doing so. Awesome stuff all around. As good as the meats were, I was also very happy with Bexar’s sides. I got the “Casa Corn” and their “Southern Slaw”, which both hit home runs for me.
Casa Corn – I am a huge fan of corn in almost any configuration. But two styles really get my motor running – creamed corn and Mexican street corn. So when Kathryn described their Casa Corn as a fusion between those two, I knew I had to try it. And I tell ya, it did not disappoint. It was creamy just the way you’d expect a standard creamed corn to be. But it also had the flavors you hope for in a Mexican street corn dish – mayo, Mexican crema, lime juice, chili powder, cayenne and cotija cheese. The combination of these two was just dynamite – or maybe kryptonite for me. I’ll be back for this side dish again and again and again. Southern Slaw – Their take on coleslaw is very refreshing and delicious. There is no mayo involved – it is a vinegar-based slaw that eats more like a salad than like a coleslaw. Read more2020-10-22 Thu. 7p. Bexar Barbecue in Tomball, Texas has friendly staff and a very tasty menu! I’ve eaten 100% of it and it’s all been very good. They make everything homemade from scratch except the tortillas which are also very tasty. All their meat is smoked there too & they can go mobile to visit events. For some trivia, they pronounce it BEX-er, not bear.
The brisket and turkey both taste great and are smokey and tender. They easily hold their own on flavor or pair well with other stuff. The pork and beef ribs are so tender you can pull the meat off the bone. The beef ribs are so big that one is usually a meal! They make their own sausage and it’s great. Their candied ends are similar to brisket burnt ends, however, they have extra sauce on them that has thickened with extra time in the smoker and it almost approaches a very tender and juicy beef jerky - yummy! Their street tacos have a special delicious sauce mixed with the shredded brisket. The BBQ tacos are sliced brisket, turkey, or sausage on a grilled tortilla. The grilled tortilla gives off a mouth watering aroma. The sandwiches are delectable grilled buns with their sliced smoked meat.
What got me going here in the first place was their Bexar Burger! I was talking with someone about burgers in general and they said I really need to try this burger so it's the first thing I ate here. I highly recommend it to anyone who likes BBQ and cheese burgers - this combination is super! They use a homemade brisket grind patty for the burger part as well as smoked brisket on it for the BBQ part.
The Bex-Mex burger is another tasty brisket grind patty, however, this time there's fresh-roasted poblano pepper, queso blanco, pico de gallo, and fried tortilla strips. You get some of your veggies with this burger and they taste good too.
They have a few different sizes of sides (all their own tasty recipes): small, pint, and quart. The casa corn is similar to a cup of corn I’ve had at food trucks. Their baked potato salad is the best I’ve ever had anywhere! They serve it hot or cold and both are great! Their southern slaw is good. Their Bexar beans have meat in them too. Their sweet potato souffle has nuts and toasted coconut mixed in and it's so good.
They have three tasty homemade desserts: salted chocolate fudge, pecan pie, and a mason jar of banana pudding. The mason jar can be kept as a souvenir. The fudge is moist and not hard, it's just right and melts in your mouth. Oh so good! The small pecan pies are just the right size for a snack, and the banana pudding is a unique recipe I've only tasted here.
The tea tastes fresh and comes in both sweet and unsweet. They also have fountain drinks and bottled soda.
They have gift cards, shirts, hats, and some other stuff too.
Their homemade BBQ sauce is yummy and on the sweet side. They thin-slice the pickles at the restaurant so they taste fresher than other places. Other sides include marinated onions (made there), sliced onions, bright green fresh sliced jalapeno peppers, cilantro, pico de gallo (made there), queso (their spin), limes, and lemons.
Most of the streamed music is upbeat lively country-themed and has the occasional bad word so be careful with youngsters.
It is possible to seat far enough apart to maintain a safe distance from other guests. Fenced-in outside seating is also available with clean artificial turf.
The public restrooms are good, especially to wash up before and after all that great eating! Come hungry leave happy!

Read moreThe service and friendliness of the staff is great. The meat is wonderful the beef ribs are absolutely outstanding some of the best I've ever had,, but be prepared to fork out some money. You should be aware like most BBQ places these days the meat is sold by the pound. Which is standard. And it's rare to find a place that actually carries the beef rib in addition to the pork/spare rib since they have to be cooked very differently. But the beef ribs are huge and for the most part one will feed even the hardiest of appetites which is good because they will run you close to $25 a piece. Now I've had them two different times and they have been some of the best beef ribs I've ever had and I would go more often but yeah at $25 a piece I just haven't. The brisket is as good as the rib and more reasonable especially if you are getting one of the sandwiches. Haven't tried the other meats. But you best love black pepper if you eat the baked potato salad or the slaw. They use fresh ground black peppercorn in their sides at least those two and I thought it was a little heavy but my opinion could be shaped by the fact that I hate black pepper so you might not find it so overwhelming.
