Introduction Rise Soufflé Wine & Bistro specializes in the French delicacy, the soufflé, originally popularized by Marie-Antoine Carême. Rise offers savory and sweet versions in a charming setting. Originating in Texas, its Tulsa location at Utica Square carries its signature whimsical dining experience. Does Rise meet the expectations of Tulsa’s culinary scene? Let’s find out.
Atmosphere Rise Soufflé exudes a cozy yet refined French countryside vibe with rustic accents, vintage art, and soft lighting. The open kitchen invites diners to connect with the culinary process, making it perfect for relaxed, intimate meals.
Service Service was collaborative and attentive. General Manager Brian and Chef Jake Robinson engaged with guests, adding personal touches to the experience. However, service didn’t quite reach excellence.
Dining Bread: Presented with a guillotine, the bread service was playful but slightly impractical, resulting in smashed slices. Still, it was good with unsalted butter. Cheese Plate: Featuring truffle-infused cheese, goat cheese, and manchego, the plate included well-paired accompaniments like figs and pecans. Marshmallow Soup: A carrot-tomato bisque with goat cheese soufflé. Slightly sweet and under-seasoned, but enjoyable. Artichoke Andrée: A tangy artichoke dish, but difficult to eat due to its fibrous leaves. French Onion Soup: A standout, perfectly balanced with rich broth and sweet onion flavors. Truffle Mushroom Soufflé: Balanced but deflated too quickly. Crab Soufflé: Strong crab flavors and a subtle heat, making this a standout. Sun Dried Tomato and Chèvre Soufflé: Well-balanced but deflated quickly. Herb and Spicy Sausage Soufflé: Tasted like a breakfast dish, pleasant but lacking refinement. Southwest Chicken Soufflé: Underwhelming and underseasoned, with a cold green chili sauce that didn’t complement the dish well. Tara’s Escargot Soufflé: Overpowered by garlic, leaving little room for other flavors. Raspberry Soufflé: Perfectly executed, with vibrant raspberry notes and balanced sweetness. Chocolate Soufflé: Another classic success, well-balanced and indulgent. Bread Pudding Soufflé: Overpowered by egg flavor, with faint spice notes. Apricot Soufflé: Tangy but too acidic, lacking balance. Praline Pecan Soufflé: The standout, with perfectly balanced flavors of caramel and pecan, topped with boozy caramel sauce.

Read moreI want to be honest in my evaluation. The food at this restaurant is truly good, and the apple dessert was, without a doubt, the best I've ever had. However, for me, etiquette and protocol at the table are fundamental aspects of the dining experience. I came to celebrate my birthday, and unfortunately, the experience was a complete chaos.
The server who attended to us was very kind and made a genuine effort to provide good service, but I don't believe he possesses the necessary skills to work in a restaurant of this caliber. He had no knowledge of wines, and the restaurant also lacked a sommelier to come to our table and offer guidance.
Additionally, the service was slow; we had to remind him several times to clear our plates. At one point, he jokingly offered to sell us everything on the table, such as dishes and cloth napkins, which led us to laugh at the situation, as it felt more like being in a market.
I understand that the server was likely nervous, and I don’t judge him; he did his best. However, the responsibility lies with the restaurant for not having staff who meet higher standards of service and etiquette. It’s not about pity; it’s about receiving the level of attention that corresponds to their pricing.
I hope these observations help the restaurant improve in the future because the food deserves a dining experience that matches...
