The new Korean-Japanese restaurant brings new flavor both in atmosphere and food to Wichita Falls.
Food: Pros: Tonkatsu- The breading around the pork was so delicate, the crisp is like a cloud! I would prefer a fattier cutlet, but the lean meat definitely was hefty and delicious. Rolls- We got the Tempura Toll and the Salmon Sake. Both were tasty, particularly the salmon sake which had tuna & is definitely the most worth it in terms of meat to cost ratio. Wasabi- The only reason the wasabi is getting a separate shout-out is due it's amazing organic flavor and quality! Wasabi tasted so clean and not overly pungent. Korean fried chicken: The spicy (양념) sauce was deliciously authentic. It balanced the Korean gochujang and sweetness very well! It was freshly made and well presented. Highly recommended! Garlic Edamame: Perfection! Salty, savory, and light- it's the perfect appetizer!
-Cons: Korean Fried Chicken (Soy Garlic): The flavor was really good, but it was just too salty. The rice from the tonkatsu saved it! Please moderate the salt level... Water: The cold tap water was unappetizing. Instead of cleaning the palate it tainted it. Very unfortunate especially since we don't drink and water was our only option.
Atmosphere: They really maximized the small space! The minimalistic furniture added to the cozy lamps and wooden wallpaper really elevated the experience. The interior was unlike anything in Wichita Falls, which made it both unique and welcoming.
Service: Good overall! We could tell everyone was being intentional.
Tip: Go during Happy Hour (4:30-5:30pm)! We got so much food for a reasonable price and we still got our chicken for happy hour price even though we ordered more after 5:30pm.

I say this because my husband got food from here and unfortunately I do not have the ability to eat this kind of food until the next day after it sits in the fridge for a while. The lady working the phone and counter was having a hard time but it's okay it seemed like she was new which is understandable. the chef came out and apologized to my husband and ensured he left satisfied which made up incredibly for the womans behavior. The extra sushi he received as an apology went to me after a VERY long night at work.
When I tell you this sushi is good. It is GOOD. I ate this eel and shrimp nigiri the NEXT day and it was anything but immaculate. It is literally speaking some of the best sushi I have EVER gotten the privilege of eating and this was day old sushi sitting in the fridge. I have eaten fresh sushi from many places across the south and even Midwest to East. I have eaten at omakase, ayce sushi and standard sushi restaurants that charge upwards of quadruple the price with less than half the flavor of what this man served my husband. The texture of the eel was anything but cheap, it was well sourced eel and shrimp. The shrimp was more like a large prawn and the rice... The rice actually had flavor and was properly made sushi rice. I could taste the sushi-su in it. If you're like me and you are picky about how your white rice is made, especially SUSHI RICE, you will be pleasantly surprised to know it is made with the hands of an expert who is 100% passionate about what he does. You can taste the talent in his food. This is not your run of the mill sushi restaurant.

The inside appears modern with great mood lighting, and while small, no distracting sounds from the kitchen, and you can hear your dinner partner over the fully-seated restaurant. Be sure to make a reservation, as this small local eatery, while kept on the down low, has quickly come in high demand. I chose the house red, Tonkatsu, and a Volcano roll. The Tonkasu was perfectly prepared. It was not heavy or over fried. It was light, buttery, and a perfect balance of melt-in-your-mouth texture and flavor. The volcano roll was also a wonderful explosion of taste, texture, and freshness that I have not found in a sushi roll in a very long time! The little crispness on top, freshly cooked shrimp, soft fresh rice- everything is fresh! I have been hesitant to get sushi lately due to this being an issue in this area. I am glad to say that we have a quality sushi place, that is well worth the cost, here again! Oh and our waitress!
