We chose Pro.Khinkali based on glowing reviews, expecting a delicious meal. The spacious interior, adorned in vibrant Eastern style with an open kitchen, creates an engaging atmosphere where you can watch the chefs at work, adding a layer of transparency and charm.
FOOD:
The restaurant serves Georgian cuisine with a distinct Eastern flair. Naturally, we ordered khinkali—a must for any visitor—along with chebureks and a grilled lyulya kebab. The beef khinkali were impressive, with thin, smooth, well-seasoned dough encasing a rich, flavorful broth. The meat was tasty and well-spiced, though a few pieces had unwelcome sinews, which slightly marred the experience. The chebureks were stunning: golden, crispy, puffed-up dough filled with perfectly seasoned, sinew-free beef mince, delivering a juicy, satisfying bite. The lyulya kebab was equally delightful, made with quality meat and paired with a fresh tomato salad. The vegetable salad was a great side, with ripe, crisp veggies that complemented the meal beautifully.
SERVICE:
The service was warm and professional. When we mentioned the sinews in the khinkali, the manager promptly assured us that the batch of mince would be inspected, showcasing a commitment to quality that every restaurant should aspire to. As a kind gesture, they offered us a complimentary dessert, which was a lovely touch.
VERDICT:

Read moreI was invited for a business dinner and visited Pro.Хинкали by Novikov in Tashkent, a Georgian restaurant that left a positive impression. From the moment we walked in, the bustling atmosphere set the stage for an enjoyable evening.
The menu boasted an array of Georgian delights, and I must say, the food lived up to the hype. We started with the Bhaly, which were flavorful, I'd rate them at 7.5/10. The Georgian mixed vegetables salad and Khachapuri with greens followed, both earning an 8/10 for their delicious flavors. The Khinkali, a Georgian dumpling, was also a standout at 8/10.
The Lula Kebab exceeded expectations with its tender, well-seasoned meat, earning a solid 8.5/10. The Dolma and Chashushuli maintained the high standard, scoring 7.5/10 and 8/10, respectively.
As for dessert, the Baklava and Honey Cake were enjoyable, though they fell slightly short of the previous courses with scores of 6.5/10 and 7.5/10, respectively.
One aspect that truly stood out was the service which was amazing. The staff's attentiveness and knowledge of the menu contributed to an excellent dining experience.
