I just came back from a TW trip a few weeks ago, so i fancy myself some beef noodles to remember the taste back then, but this place sadly is not it.
I find it strange when the broth can be both salty and bland at the same time, and there's no particular strong point to the broth. The herbal taste is quite lacking and I think the place tone down the herbal in the broth to fit more with the general vietnamese taste.
The noodles are ok, it's not the wheat noodle i had back in TW, but it's better than the average noodles around here.
The beef, while tender and quite juicy, is very little in terms of quantity. I find it hard to finish the noodle when there's only a couple slices of beef in my bowl.
The fried nugget is both dry and stale, while the noodle tastes somewhat flavorless. So in order to add some punch to it, we added the chilly oil, and this is where the next problem lies. The chilly oil here is NOT the normal aftertaste-focus chilly oil, but the straight up spicy tasting oil. This makes the oil overpowered everything when added to a bowl. There are places where I regularly return to just because of the chilly oil, it's literally make or break a bowl.
