I've never been to Japan. But if I were, I bet the ramen would taste like this one. They let you customize the broth flavor, noodles stiffness and spicyness. I took egg flavored ramen, stiff(not the extra) noodles and medium flavor and medium spicy paste. And some gyoza polish my experience. Oh boy, was it a treat! And I've eaten my share (tons) of ramen in SEA and Europe. The middle flavor broth is as rich as I'd expect from usual ramen place back home or in chain restaurants. Thin noodles with chewy texture, mmm. Just the right level of spicyness(close to none). Egg does not spill or fall apart immediately when you grab it with chopsticks, explodes with flavor in your mouth instead.
I am sad I am leaving tomorrow, otherwise I'd come back to try full /rich flavor and extra hard noodles. Gyozas were good and fresh and burnt just right, but nothing wow. Ramen raised the bar so high.
Staff is very helpful and attending, and they have this funny way of ecoeing the order and hello/goodbye throughout the establishment, feels very different.
Restaurant was full of Asian people, almost all looked confident when ordering, so might be authentic Japanese, and this folks know a good ramen. Place is not high-end, no need to dress up, shorts and flip-flops are fine.
On the sad note aka 'be prepared': portion is rather small by 'big fat western dude' standards - default toppings are 1 egg and 2 pieces of meat. But they have an option for extras or there is a 'chashu' ramen which I believe has more meat in by default.

What you can expect from a typical bowl of tokotsu ramen is an intensely rich broth steeped full of flavor and aroma, bouncy noodles, and fatty succulent pork. The tare of the broth was packed full of flavor and it is evident the broth was cooked for an ample amount of time. The juices and the fattiness of the broth coated the slick noodles perfectly and was a match made in heaven.
Much to my delight, free toppings included beansprouts and minced garlic, one of the only stores I encountered so far do reminiscent of Japan. The service was nothing short of excellent with our orders coming out fast and the servers attending to our every need immediately. Tucked away in the easily navigatable 'Japan ' alley Ho Chi Minh, this ramen shop is the epitome of a hidden gem.
