SALT Craft Meat Market — Attraction in Castle Rock

I rarely leave bad reviews and I feel bad for leaving this one too, because I usually have really good experiences with the products from this place. That being said, I bought a bunch of flank cut short ribs the other day and took them home. I thawed one package in the fridge for just 12 hours and came home to cook it. When I took the short ribs out of the package, they were rotten, moldy everywhere, and had a horrific smell to them. I didn’t do anything wrong to them. I literally just thawed them in the fridge for a short period of time, the way I’ve been thawing all meat for years. This means that when they were frozen at the shop, they were already rotting before they were frozen. This place is incredibly expensive. And I understand that it beef isn’t cheap anywhere and that good quality beef is going to cost more, and usually I’m willing to pay the price. That being said, when I go to a butcher shop and pay a large amount of money per lb for beef, I at least expect that there will be some quality control in the shop, and that I won’t be wasting 50+ dollars of my hard earned money, on beef that has already rotted. Went here for lunch today because Castle Rock has been in dire need of a legit butcher and deli. The sandwich was great and fresh quality ingredients. However, the portion wasn't enough, left my wife and I still hungry, and had to eat again in two hours. I'm not a big guy either, just a buck fifty fella. We both wish they had some bigger sizes they could offer. I won't be able to make this a regular lunch spot until then. I'd need like a sandwich and a half for it to be just enough.

I didn't buy any of their butcher meats but the quality did look good. Not sure where they get it from as there was no signage of where the meat was coming from. I'm assuming local but some more information in view would be welcomed. Prices were definitely higher than a place like Whole Foods but no idea if this is organic grass fed pasture raised beef or not? I know I could of asked but they were busy and I was hungry. We just finished our Valentine's dinner ordered from Salt. I just can't rave about this enough ,the menu and even cooking instructions were perfect. We dined on the best meat we have had in a long time. I'll be honest I was not sure, but I'm totally sold now. Every item was so flavorful, fresh and so delicious. I'm really anxious to see what they offer in the future. I will not purchase meat from anywhere else now. Flavorful is an understatement, outstanding doesn't come close, a truly delightful meal.
