What makes your mouth water? Is it the thought of a decadent dolce? A cherished memory of a savory dish from the past? Perhaps a story of someone's culinary adventure? Or maybe…just maybe… a captivating photograph of food that is so enticing you can almost taste it? For me, it was the last scenario that set my taste buds alight on a recent stroll through the West End.
I was en route to another lunch spot when La Favolosa caught my eye, un vero colpo di fulmine (love at first sight)! The menu was artfully displayed on the wall, with pictures so stunning, they practically sang to my soul. I told Albert, the owner, that while I was headed elsewhere that day, I had to come back to try his creations. And return I did, the very next day, very hungry and ready for a slice of Italian heaven.
My choice? Il Guly. The decision was simple: the clean simplicity of prosciutto cotto, fresh mozzarella, sweet pomodori secchi (sun-dried tomatoes), fragrant basilico fresco, and a generous drizzle of olio extravergine di oliva (EVO) called to me. As I write this, just remembering it makes my mouth water…che fame!
The experience began with the focaccia, baked fresh daily, sliced to order, and lavishly brushed with olio di oliva. Albert then freshly sliced the prosciutto cotto, layering it onto what was fast becoming my capolavoro (masterpiece). Next came the mozzarella, cut with care and positioned perfectly to ensure a creamy bite every time. Fresh basil leaves were plucked right from the little plant growing above the deli case and gently tucked beneath the mozzarella. Finally, the pomodori secchi, with their rich sweetness, were added, followed by another drizzle of EVO to seal the deal. The result? A sandwich so divine, it would make Mama proud. Rarely does a photo of food exceed the taste of the real thing, but at La Favolosa, the real thing is a masterpiece beyond compare. Albert isn’t just a sandwich maker, he’s an artista straordinario, a maestro of Italian flavors, with years of experience honed in Italy. As he explained to me, his creations are crafted with precision and love, which means substitutions are limited. This commitment to excellence ensures every bite transports you straight to the bustling streets of Florence or Rome. If you’re in the West End, don’t miss the experience! The Shop is a take away style (not a fine dine in restaurant, with knife and fork) but you can sit on comfortable stools and eat there. I can assure you the quality of the food it’s exceptional. You don’t need to go to Italy when you have a place like this in Australia. The owner Arber is a hard worker and he deserves all the success, having just opened recently. The staff is Italian which demonstrates the willingness to remain authentic Italian food. The chef’s pizza maker Damiano is a funny joke character and very capable to reproduce in Australia what we call in Roma the “ pizza bianca “, where in Toscany is called schiacciata or focaccia. Seriously, try to go once and you will understand what I mean. I will recommend everyone this place. Topped with vibrant rocket, truffle paste, prosciutto and drizzled with high-quality olive oil, each bite was a testament to the chef's skill and attention to detail.
