So as a bourbon (technically this is a bourbon distillery, but the way they finish it has to be called a whiskey) fan when my husband suggested we visit the Cooper Shot, I knew I had a keeper! My husband prefers wine and this trip was all about me. We got there on a Friday night and the place was busy we ordered our drinks and headed out to the patio (we were headed to their sister store C&S) the patio was busy and there was live music. We enjoyed our time there Friday night. We decided Saturday to hit the Copper Shot again, because whiskey. April was the bartender and manager she set me up with a flight of whiskeys for a tasting. The rapid age whiskey is stout, but not just WHAM here's 100 proof whiskey, it has a nice flavor and finish. The aged whiskey of course was smoother, and just as good. Then I had the Pecan Shine! Oh my goodness. Smooth and just when you think that's niiice up comes the pecan. That was a nice drink. The Honey whiskey honestly was delicious, if not a little too sweet for me, but I wouldn't turn it down. It was a nice drink. My husband and I spent the better part of the afternoon just day drinking and watching a rather intent busy guy doing everything that needed done and helping April as she needed. I asked if he was the brains behind this project. He said he was more like the idiot. Steve loves what he does and it proud of the product he makes, just talking to him it's evident. He is an authentic Caribbean Rum distiller -and his rum does NOT disappoint just trust. He graciously gave use a tour of his operation he didn't have anything in his vats as he just got back from Scotland for a class in scotch production. His vats are open so you get "a taste of Bastrop" in his bottles. What's in season helps flavor the end product. We quickly decided this would be our hangout if we lived in Bastrop. So if you get the chance swing by and get a drink of any of the fine offerings from the Copper Shot hang around and talk with the knowledgeable staff and enjoy the atmosphere of the 150 year old building that houses Copper...
Read moreI tried it and I wanted to like it, I really did. I love supporting local and have found many amazing distilleries and breweries in small towns that are real gems. Unfortunately I wasn’t overall satisfied with my experience here
The whiskey just simply wasn’t very good, the pecan whiskey was a bit syrupy in my opinion and the honey whiskey was way too sweet although that’s to be expected of a honey whiskey it was sweet to the extreme. The barrel aged whisky wasn’t great either and went down very harshly. There was one whiskey I enjoyed in my flight and that was the only whiskey I enjoyed was the… whisky.
Service wise everyone mentions having amazing service, but it must have been an off night because our bartender was a bit off, still always tip! The cowboy coffee and the Espresso rum martini were too sweet but ofc they are coffee liqueur based.
Now the location and the spot itself great, the outside area is wonderful, the people there seemed nice. I’m glad Bastrop has a cool spot like this there I just wish well… the whiskey was better, but maybe this place is better known for other distilled drinks!
I can’t personally that there was any drink I truly enjoyed here. The cocktails me and my friend had were too sweet, the whiskeys we tried simply put weren’t good. I can’t say I’ll be back but it does have a great atmosphere to hang out at! It’s possible me and my friend got the wrong cocktails. But ya wasn’t really satisfied with the overall experience. But hey if you’re reading this you’re probably visiting Bastrop so why not support a...
Read moreCopper Shot Distillery is one of the most unique and inviting bars in Bastrop, located just east of Austin. Among its many standout features is the customizable Bloody Mary bar, where guests can enhance their cocktails with a wide array of garnishes—ranging from pickled vegetables to olives and an impressive lineup of hot sauces. Although the Bloody Mary isn’t always listed on the printed menu, ask for their “Bastrop Bloody”—a house-made cocktail crafted with their signature Sweet Potato Shine, Zing Zang® mix, Worcestershire, and a special garlic kick. Once you order, you’re free to personalize it using the garnish station tucked in the corner.
Beyond cocktails, Copper Shot also distills a range of flavored whiskeys using a fusion process—where ingredients like fruit, herbs, or spices are soaked directly in the finished spirit to infuse flavor. This method contrasts with adding ingredients during fermentation or distillation, which is generally discouraged—especially with delicate fruits like strawberries. The high heat of distillation destroys subtle berry aromas, and strawberries introduce wild yeasts and excess sugar that complicate the process.
Instead, post-distillation infusion is the preferred technique. Two common methods are: Maceration: Slice fresh strawberries and soak them in whiskey for several days in a sealed jar, then strain. Sweetened infusion: Add a bit of simple syrup to round out the flavor and reduce tartness. Copper Shot Distillery embraces this approach, offering bold and nuanced flavors in a relaxed,...
