Read more07/30/25 CREOLE FOODS OF LOUISIANA I only been to New Orleans a handful of times in my life and there are days that I miss those great deep flavors of the Creole south. I found Creole Foods of Louisiana from a friend who recommended it cause he orders a lot of stuff from them. I can tell you this now they have a a fan. I placed an order & two days later it was processed and shipped out. It arrives in a tightly sealed Styrofoam package was a little skeptical because it was coming from FEDEX, which has not been great lately in my area in New York. it always has some kind of delay problems, but it arrived within three days, frozen fresh and ready to cook. Read moreI ordered andouille. They use shredded sausage instead of ground. It dries out and the texture is not good. I used it in a crab boil. It became extremely dry, and it's salty. I won't order from them again. I definately would not use this sausage in a gumbo. It's not good. I'd use regular Hilshire Farm sausage before spending a ridiculous amount of money on this sausage. Sorry, but your ain't good and the texture is weird, the flavor is "meh", and it's too salty with no depth of flavor. Do better. Bit I'm sure you are confident in your recipe. Suggestion, ground your sausage, add less salt, smoke it more, and use a crispy casing, so when you eat it it has a snap. The shredded texture, and the seasoning doesn't taste good.
