August 18, 2022: Attended a class on preparing and smoking brisket sponsored by TN Meat Co. This event was more than I expected, I learned a lot, had an incredible time, and went home full. They had craft beers available along with homemade wines and cigars from Prohibition Home Brewing. There was a beautiful charcuterie board with delicious meats and cheeses, and Kyle cut up some smoked sausages for everyone to sample. Highly recommend the Jalapeño Cheddar Sausage…a nice balance of rich pork flavors, a hint of heat, and a rich cheddar flavor really put this sausage over the top.
BBQ Master Pudge Padgett and his smoker Medina from Old #9 BBQ were on hand to educate us on the finer points of preparing and producing great brisket. We got to learn about the smoker, heat distribution, prepping, seasoning, smoking, and carving. With a small class like this you had time for questions and discussions on different experiences preparing brisket. Everyone learned a lot and Pudge did a great job.
After the class was done, Pudge and Kyle carved up a whole slab of brisket along with some delicious sides!!! The proof is in the meat…and Pudge Padgett knows his stuff producing some of the finest Texas style brisket you could ask for!!! Seriously…this brisket was perfectly smoked and both the lean and moist cuts were melted in your mouth.

Props to Kyle Birchfield, he is an integral part of their team and is such a pleasure to talk to. Pudge Padgett can now add instructor to his resume, he did a great job sharing with us many of the finer points of smoking and preparing meats. Many of his tips will be really helpful to the “weekend smoker” to produce more consistent results. It was also great to meet and sample the wines from Prohibition Home Brewing. Jim, Jackson, and Michelle were wonderful hosts and their store can actually set you up with a home wine making kit!!! The Double Oak Red I sampled was delicious…surprising especially for such a young vintage. If you get the opportunity to sign up for one of their classes I highly recommend you take advantage of it.
March 22, 2022: Visited and shopped the newly opened TN Meat Company…this place is awesome! I had the pleasure to talk with the owner about the plans for the store and what will be offered. He said every location is different, so they are feeling out what folks want and are looking for customer input. I picked up a bottle of the Franklin Tea Mango…absolutely delicious, not overly sweet, and no “aftertaste”. Also picked up a sleeve of their pork sausage, will be giving that a try for breakfast tomorrow. This is a really nice store and the staff is very helpful. Read moreDang. I wish I had some photos. First trip today (well, yesterday. It's 12:48am), and it was pretty amazing. Yes, you can get amazing steaks, yes they even have some hot food, they've got drinks, and they've got game meat - but I was looking for a lamd shoulder. I know I could go to CostCo and get a lamb shank like a field hand on holiday, but for feeding a lot of people (and one of them my Greek mother who ran restaurants all her life), it had to be a shoulder. Of course they had it - 10 lbs, absolutely perfect, wasn't even frozen, and it was spectacular for dinner; but the TN Meat Takeaway™ for me was the people and the space. First of all, this is the cleanest buther shop you've ever walked into (and if you've worked in the field, you know how they can be), and at the same time, it was warm, it was well-lit, there was a lot of wood and lights - it had an altogether more Williams-Sonoma vibe (except with hot food and drinks) going on. The selections were pretty fantastic - I went for lamb, but also ended up with jerky, bologna burnt-ends (which were hot and fantastic) and some other stuff. I believe it was Kyle who waited on us? Knowledgable, personable, definitely knew his food, schooled me a little on skirt steak (thank you sir), and even knew what we were there for as soon as we walked thought the door, and that was only from a Facebook conversation.
