So I know how I chopped up that cut wasn't the best (first time trying), and the cut I got isn't particularly for steaks, but I don't mind. I'm totally fine with eating some chewier cuts here and there. But holy moly! The flavor of this beef was so so incredible. If they don't have a specialty cut of meat in stock they will order it for you. I’ve never had such awesome meat. The owner, super friendly, and his niece, helped me pick meat specific for a last minute bar-b-que with some friends that could be cooked quickly. Typically I like the end pieces of the steak but I tried all parts and ate a whole steak. It was so tender and tasty! Way better than any store bought meat! We are hooked!
