Our friend invited us to do Italian cooking class. We had a wonderful experience. It was a very relaxing night with great food, drinking full-bodied wine, and having a freshly prepared authentic Italian meal with friends. It was so nice. Riccardo was very patient with going over the techniques of rolling the dough and running it through a special machine to make it thin. We measured Seminola flour with another flour and duck egg then combined it all together for the pasta. Chef Ricardo guided us through the whole process. The ingredients are very refined but we can find at the shop. We made all the filling ourselves then started making the different pasta. I never knew there were different variations with tortellinis-square cuts, then round, then square and you twist the ends and make another end like a kerchief. His sous chef was very helpful and cut up different types of cheeses with a beautiful presentation. It was a wonderful night learning how to cook. The food was amazing under Riccardo's lessons. Riccardo is a magician in the kitchen and an amazing person. The food was incredible - the best fish I've ever had - and equally as important, the experience for my mom's retirement celebration was unforgettable. From start to finish working with Riccardo on a custom menu, wine pairings and day of preparation were seemless and simple.
