Oakville branch of a home-grown Canadian coffee-focused company (roastery, cafes, packaged coffee etc).
I was first introduced to Pilot through their coffee outlet in Toronto Union Station. Their coffees are great and the staff takes meticulous care to ensure the drinks are well made. One of the better coffee outlet choices you can make while in the Greater Toronto Area (GTA).
What strikes you at Pilot Coffee Roasters is their meticulous attention to detail. It comes across in how the locations are designed — high-quality espresso machines, equipment that is embedded and integrated into the countertops (giving the barista more working space and creating a more open ambiance/feeling). You can also seen it in the carefully designed workflow/process (each shot is weighed).
At this location, currently (Aug 23) they are serving Heritage beans (primarily sourced from Brazil), and the San Joaquin beans (single sourced from El Salvador). I’ve had flat-whites made with both blends. Excellent drink - perfect shot, well blended milk.
The coffee is awesome, the staff interesting, and the place inviting.

Read moreTried Pilot Coffee in Oakville recently — honestly, it was just okay for me. I know a lot of people really like Pilot as a brand, and I’d say the coffee is probably a bit better than Starbucks, but not by a huge margin. Nothing particularly memorable about the flavor.
What I did like was the atmosphere — it was quiet, not crowded at all, which made it a nice spot to sit down and have a proper coffee chat. Sometimes that alone is reason enough to go.
That said, their drink menu is pretty limited — mostly traditional espresso-based options, nothing too creative. Same with the food — not much beyond a few muffins or simple pastries.
If I were rating based on coffee alone, it’d be a 3 out of 5 for me. If I include the quiet space and relaxed vibe, maybe a 4. Overall, a decent spot if you want somewhere low-key, but not somewhere I’d go out...
Read moreSuch a disappointing experience. We ordered 3 drinks , the taste was ok but the drink were lukewarm. Unfortunately that was not the worst thing. The service was 0 stars. I asked to have my drink in a mug instead of a paper cup and was told that an hour before the closing they are serving only in paper cups. This doesn’t make sense at all. First of all, I was charged the same price as people who ordered 10 minutes before me. Secondly, tables around me all have people still sitting with their regular cups, meaning I could pe have my drink in a mug too if the baristas didn’t start the dishwasher yet.
