The absolute benchmark for wonton noodles in Hong Kong. There aren't many places that have been around as long as they have and it's for good reason. Their noodles are thin as they should be, and have the perfect amount of flavor and chew to them. The wontons themselves are bite sized and contain both shrimp and pork. The wonton wrappers are thin and silky smooth. The broth is also so full of flavor that you should drink it after you're done. Another thing that most people don't particularly notice is how good and well made their chili oil is. Their home made chili oil is both spicy and fragrant and is the perfect complement to the wontons, noodles, and broth. Their beef brisket is also no slouch; tender and flavorful and their beef brisket broth is also the perfect balance between sweet, salty and umami. I hope they never go out of business and I will...

This is not a place I would check out especially on weekdays when all the people working in the area go there.

I only happened to dine there on a Sunday afternoon because it was raining and I was too lazy to walk else where.

As it was Sunday, there were less people hence the staff were laid back so I was lucky and didn't have to put up with the usual unfriendly service which you can imagine when they are busy during lunch hours!!

Well, it was just noodles or noodles with different toppings.

I actually wanted the beef but she somehow heard wonton.

When it came, all the wontons were at the bottom.

The noodles had the usual taste and hard slippery texture, not my favourite.

The wontons looked good even though they were small because you can see a whole shrimp in it.

The only thing that let it down was the saltiness, the wontons were...

I've been keeping this a well-guarded secret for a while now but the blabbermouths at Cathay Pacific recently featured a piece in their in-flight magazine waxing lyrical about this place so I might as well share the goods. I've frequented several wonton noodle shops in HK and this is by far my favourite. For a smaller price tag than the popular chain one up the hill on Wellington St, you get a significantly more flavourful broth, sweeter and plumper prawns and importantly, a larger bowl of noodles. My family and I have been dining at 忠記 for many years now because in our opinion, they serve the best wonton noodles in town. They have perfect bite-sze wonton and the skin is thin, with fresh shrimp and pork fillings. The noodles are smooth, chewy and full of egg flavor. But most importantly, their broth uses dried flounder fish, pork bone and shrimps’ shells. As a result, it has a great aroma and packed with umami too. Aside from wonton, their melt-in-your-mouth braised beef brisket and tender is also a must-try. I prefer to pair it with dry noodles because I don’t want to dilute the broth which is packed with collagen!
