Abismal service, no communication with the chef, and half of the time no one came and introduce the sushi to us. Even when the servers came and talk, it was incredibly short with utterly useless nonsense and wrong information.

When each dish was served, the servers wait for nearly half a minute before they came forward and introduce the sushi to us. During the time, servers were standing in the corner doing nothing. Even when they came and tell us what the dish was, it was just a short sentence saying what type of fish it is. No introduction or even a mention of where the dish was sourced from. The server also mentioned a bit about the aging of the fish, but the information about aging protocol and general knowledge was wrong.

Utterly unacceptable service to charge over $500 for. Would...

Booked for 13:30 but their staff said they changed to 13:45 for us and informed us already (never received any info on the change and they refused to let us in till 13:45 sharp) - the change in time is to do cleaning even though over half the seats were empty inside. Ironically, my food tray was dirty and had to be replaced when I sat down. The staff also hit my finger with the tray when replacing it. Also, all the staff should really wear tie clips since I got smacked by their draping ties repeatedly every time they bent over to refill tea or serve food. Food was not bad but the seating arrangements were quite packed for this price point. For the same price, there are a lot of better options with better service...

因為不能去日本, 所以很多香港人也會選擇吃一餐廚師發辦來滿足一下心情, 看到網絡上有介紹位於尖沙咀海港城港威大廈地下這間新開張的鮨央泰, 來頭絕不惹少, 是由東京米芝蓮一星餐廳「銀座いわ」創辦人岩央泰, 和他的入室弟子金子司主理的過江龍Omakase, 主打江戶前風格的廚師發辦。 粟米豆腐 坐下來不久, 侍應為我們添上了溫熱的抹茶後, 必即便送上了前菜, 清甜的粟米配上口感嫩滑的豆腐, 再加上即磨的wasabi來調味, 味道清新可口, 上面的食用花為整道前菜的賣相加了不少的分數。 慢煮北海道水八爪魚 在煮這道菜之前, 師傅特地把巨型的八爪魚拿到我們的面前, 讓我們驚喜不已, 利用慢煮的方法令八爪魚非常入味, 煮熟後然後雪凍, 令八瓜魚口感柔軟, 另外加上柚子胡椒鹽來調味, 提升鮮甜度。 吞拿魚刺身 師傅特地用了備長炭火來燒香吞拿魚的魚脂, 放在刺身上面的調味是經過師傳精心處理的, 蘿蔔蓉, 蘋果蓉, 薑, 酸汁及蔥互相配合得淋漓盡致, 大大提昇了吞拿魚的鮮甜味。 白子天婦羅 白子常常會在廚師發辦吃到, 但用來製成天婦羅還倒真是第一次吃, 香脆的外皮一咬爆汁, 而且白子一向都是入口即融, 配上惹味的黑松露及白酒忌廉汁, 味道口感更上一層樓。 天然平目魚壽司 然後便進入了壽司的部分, 餐廳採用了青森縣的野生天然平目魚, 其實即是常常聽到的左口魚, 是日本人氣白身魚食材, 肉質鮮嫩, 魚味清淡, 作為第一件壽司, 次序最適合不過。 白蝦壽司 這件是我最愛吃的壽司之一, 美名為「富山灣的寶石」的白蝦, 只有富山灣才出產, 外貌透明鮮美, 鮮甜味高雅清新, 配上一點香濃魚子醬海藻鹽作點綴, 增加了層次感。 手釣關池魚壽司 來自淡路島的池魚, 師傅特別挑選手釣而不是網捕原來是大有原因的, 手釣的除了魚肚顏色比較鮮豔有光澤外, 肉質也更有彈性爽滑, 原來是因為網捕的魚在過程中不斷爭扎, 令神經收緊而肉質變得較硬。 大間中拖羅壽司 選自青森縣吞拿魚的拖羅, 用了14日熟成處理, 經過一段時間靜止後, 令魚肉肉質更為柔軟可口, 熟成鹹鮮的味道與醋飯的配合絕對是天衣無縫。 燒大拖羅壽司 大拖羅這個部位脂肪相當多, 脂肪分佈好像雪花般, 富天然魚油脂的甘香, 入口即溶。師傅把它稍為加熱燒一燒, 令少許魚脂揮發掉, 味道更香濃敦厚。 北海道毛蟹壽司 很喜歡吃北海道毛蟹的朋友, 但又怕麻煩弄污雙手拆殼, 這件北海道毛蟹壽司你必定不能錯過, 滿滿的毛蟹蟹肉已經被師傅挑出安放在醋飯上面, 清甜優雅的味道帶點海洋礦物味, 令你彷如置身於北海道之中。 赤身吞拿魚壽司 魚肉的脂肪含量為少, 令魚肉肉質較為結實有口感。 車海老壽司 除了剛剛的北海道毛蟹之外, 大大隻的車海老也是令人眼前一亮, 蝦肉爽甜鮮美, 而且也是不用自己拆殼。 海膽撈飯 這碟海膽與魚籽的組合, 賣相討好吸引, 味道香濃, 餘韻持久。 海鰻壽司 最後一件壽司便是這件海鰻壽司, 平時一般吃的鰻魚大多數是河鰻, 河鰻和海鰻, 前者肉質爽口帶腥香, 後者口感較腍且清淡。 燒太刀魚 太刀魚是夏天的代表性食材, 肉質肥美, 經火炙後的魚皮富油香, 令你吃後齒頰留香。 拖羅手卷 用鮮甜肥美的拖羅來製作手卷別有一番風味, 加上外面香脆的紫菜, 味道口感一流。 江戶前玉子燒 這碟兩小件的一口大小﹑軟嫩似蛋糕, 便是江戶前玉子燒, 口感像蛋糕, 蓬鬆綿密, 但食材之中卻沒有半克麵粉, 江戶前玉子燒是以蝦漿﹑大和芋﹑雞蛋等原料製成, 是一款只有在高級餐廳才會出現的料理。 麵豉湯 看似普通的麵豉湯其實內裡大有乾坤, 鮮甜爽嫩的大蝦在裡面, 細細粒的香蔥令鮮蝦味道更出眾。 芝麻柿,啤梨 最後便是甜品的部分, 揀選了日本的水果, 作為飯後果, 冰涼清甜的感覺令人滿足感大增。
