We read a lot of good reviews about this place, so we were really impressed and motivated to have dinner here during our stay in Bordeaux. We give 4 stars and not 5 because, at the end, maybe our expectations have not really being met due to a few details that (in our opinion as customers) would have made the difference (and made gain 5 stars). First thing to say: the staff is very friendly, everybody was nice, they speak English but we have noticed a bit of disorganization and a few basics missing (like a long wait to clear the table after guests finished their meal or a long wait to order - not just us, all tables). They were enough people to well serve all customers so it was really a matter of being disorganized. The menu is very attractive, original, amazing taste combination. Mise en place fantastic and creative (you can see the photos) but, also here, a few points to comment: we were two and ordered three dishes, it was clear we were sharing (nobody asked). They brought us the three dishes all together (and no side empty dishes to let us share). Two of the three plates we had were cold dishes (tartare and tuna) but the chipirones should have been hot and they arrived cold, that was really a pity. The dessert was absolutely amazing and we recommend the chocolate/whiskey cake. Also the cocktails amazing. So, give a try at this place, because in the end they have a great potential and we are sure they can improve this little details to reach perfection (we’d love to be back here to try again and see!)

Comme on a demandé d'entrée si on pouvait avoir des créations, il nous a conseillé d'abord la carte, parce qu'ils l'ont beaucoup travaillée. Pour ma part je m'en suis donc tenu à la carte (dommage les fautes d'orthographe...), Dashi Fever, Smokiri, Bienheureux puis Zombie Lankais, ma compagne a pris un C'est Bête, puis a enchaîné sur des variations autour du mezcal (Del Maguey Vida et Bruxo N°1). Gros travail sur les végétaux ; les shrubs sont élaborés à partir des épluchures de la cuisine du restau, il y a beaucoup d'herbes fraîches, de baies séchées (goji par exemple), d'algues (le konbu sur le Dashi Fever, délicieux ), de graines germées, de fruits séchés (fines rondelles translucides de pomme, limette, racine de lotus, séchées avec des graines de pavot), le tout utilisé à bon escient. Et évidemment des dizaines de bitters un peu partout. (La bouteille sur le bar est de l'armagnac où infuse une truffe incisée ; de l'aveu de Lucas ça n'a pas trop fonctionné, moins bien qu'un premier essai) Nous avons pris un houmous léger, saupoudré de graines de pavot et de ras-al-hanout et parsemé d'amandes torréfiées, accompagné de morceaux de pita bien moelleux. On nous a régulièrement resservi de grands verres d'eau glacée, qui furent bienvenus. C'est Bête (gros succès de l'établissement, plein de gens en prenaient) et Dashi Fever (mon préféré de loin sur les quatre que j'ai pris - le sirop de poivron brûlé au tandoori massala se marie parfaitement avec le fumé du mezcal et le dashi finement salé, j'ai adoré - ça m'a mentalement précipité au pied d'une église coloniale écrasée par le cagnard, ou à crapahuter dans la caillasse entre les agaves, vêtu d'un serape et chaussé de huaraches en sisal). Smokiri (subtil et rafraîchissant) et une variation, euh, il y avait du mezcal, du jus de cranberry et de la carotte je crois. Le pickle de romanesco au thé fumé et jus de chou rouge était délicieux. Bienheureux : je n'aime pas le sucré, mais Lucas m'a rassuré, et en effet, même si c'est très rond et facile à boire, ce n'est absolument pas écoeurant. Oaxaca Negroni : deux jours avant j'avais pris à l'Alchimiste un smoked Negroni, très bien, mais la version de Lucas déboîte dix fois plus : mezcal, Suze, Cynar. La Suze est à la fois moins sucrée et moins âcre que le Campari, du coup le Negroni est beaucoup plus fluide, plus net, parfaitement équilibré. Zombie Lankais, très demandé aussi par la clientèle. L'espèce de rhum arrangé flambé dans la coque de maracuja est à mon avis très anecdotique, mais sinon ma foi ça passait très bien comme long drink. L'ambiance du bar est très chaleureuse, ça s'est vite rempli, clientèle à 70% d'habitués, bien pétés, très festif - la programmation musicale est très adaptée, pas envahissante ni trop forte, ska old school, reggae cool, hip-hop US tranquille. On a trinqué à plusieurs reprises avec Lucas, deux bouteilles de tequila perchées en hauteur à l'écart des autres, un Clase Azul reposado et un Ocho añejo single barrel, excellents tequilas (des quilles à plus de 100 €...). Les prix sont très raisonnables, surtout en regard du nombre et de la variété des ingrédients, de la qualité des alcools, et du travail (et pourtant ça dépote au service, y a aucun temps mort!). Et bien ça a beau être raisonnable, pour huit cocktails, dont trois hors carte, une assiette de houmous et six shooters d'excellents tequilas, Lucas nous a fait payer en tout et pour tout...69 € La très grande classe. De très loin le meilleur bar à cocktails de Bordeaux, dans les meilleurs en France.

Whenever we visit a new town we look for the best cocktail bars and places to eat. This trip is a gastronomic one visiting Bordeaux and San Sebastián. I was so glad we started in Symbiose for our first night. We managed to have some excellent cocktails paired with stunning food. We shared 4 small plates from a varied menu followed by dessert. This was perfect. Each dish was delicious. The beef tartare satay style was like no tartare before and sooooo good. The langoustine with fennel light, creamy and perfectly balanced. The shredded oxtail was the wife’s favourite and the miso aubergine delicious. The cocktail list is a good mix. On a busy Saturday night it did take longer than you would want to get your drink so meant we only managed 2 each when we would normally had 3-4 each. However we had been wine tasting before so this was probably a good thing. We normally order our next round when halfway into our current drink so suggest you consider the same approach if the place is busy. The bartender was working nonstop so not due to staff not working hard. Come here you will not be disappointed.

Whenever we visit a new town we look for the best cocktail bars and places to eat. This trip is a gastronomic one visiting Bordeaux and San Sebastián. I was so glad we started in Symbiose for our first night. We managed to have some excellent cocktails paired with stunning food. We shared 4 small plates from a varied menu followed by dessert. This was perfect. Each dish was delicious. The beef tartare satay style was like no tartare before and sooooo good. The langoustine with fennel light, creamy and perfectly balanced. I want to start this review by saying it comes from fellow chefs. The service was excellent and the waiters couldn't have been more personal and attentive. However, the food fell short. The sweetbreads were undercooked and when sent back, the plate wasn't redone. The sweetbreads, that had been sitting at room temperature for some time, were taken back, cut in half and twice cooked and put back on the same plate. Sweetbreads are the most inexpensive item. It is not worth a poor customer experience at this level to try to cut corners like this. We could not believe the lazy kitchen's response to their own mistake. I couldn't eat them because it wouldn't have been safe to do so, having sat at room temperature for so long. When asked a second time by the waiter if everything was OK, we explained the dish had not been replaced, the same sweetbreads had just been sliced and recooked back onto the same plate. The waiter checked with the kitchen team and they said they were prepared fresh. As a chef, this is a horrible situation to put your waiters in - to lie to them is inconsiderate to the waiters delivering the message. We were offered a drink and the main was taken off the bill however this is not the response we wanted at all. I just wanted accountability from the chefs with the mistake corrected properly and dish redone properly. We all have off days / make mistakes and this dish was 60 seconds too short. Really wanted to like Symbiose, but it just didn't work for us. We left without ordering dessert, and we never leave without ordering dessert. It was a chilly evening when we visited, and I think an indoor table may have been more successful, however, that aside neither food or service lived up to our expectations.

Good things: everything was well presented, and some of the dishes were delicious (croquette starter and aubergine main were excellent), we had a couple of glasses of red and they were nice.

So-so things: cocktail (Grand Bleu) was ok, but was mostly just a massive ice cube; gnocchi starter was ok, but bland and arrived barely warm; lamb main was alright though meat was tough.

Really disappointing thing: weird and indifferent service. It took an hour for any food to arrive (we didn't order an "appetizer" and it felt like a punishment wait, as others who arrived around the same time as us were served their appetizers during this long wait), then main followed starter almost too quickly; it's a "keep your cutlery between courses" type place which I dislike - I don't want little bits of congealed starter on my cutlery, thanks; no offer to reseat chilly outdoor diners inside as the restaurant emptied (despite asking) - in fact it felt as though they occasionally forgot that they had customers outside, or having to trudge outside to serve us was something of a chore.

If you do go, and the weather isn't too hot, definitely book an inside table, and either order an appetizer or take...
