Dining at Le Troisième in Nice was an extraordinary culinary experience that I won't soon forget. Nestled in a beautiful location with a stunning view of la promennade des anglais, the ambiance alone is enough to make you fall in love with this place. However, what truly elevates the experience is the masterful cuisine crafted by none other than Chef Sébastien Roux.
I had the pleasure of meeting Chef Roux during a previous visit to the Hyatt in Paris, and I was thrilled to discover that he is now bringing his exceptional talent to Le Troisième. His dishes are nothing short of art—each plate is meticulously prepared, bursting with creativity, and an absolute delight to the senses. The service was great and dining whilst overlooking the Cote d’Azur is always a pleasure. We chose the Chef’s selection lunch menu - which included 3 courses, a glass of wine and a coffee for 55€. To start we had a delicious prawn and black garlic carpaccio - a work of art. For main course it was Sea Bass - cooked to crispy perfection - and placed upon a deconstructed moules-frites with fondant style potatoes, mussels, shallots and a foamy buttery sauce - absolutely to die for. Then to finish we could choose a desert off the a la carte menu - so we tried the hot chocolate and caramel cookie with ice cream. Which I can only describe as heavenly. The glass of rosé we had included was very nice (4.1 on vivino) and the wine list seemed fairly priced for the location. Having just spent 10 nights dining in Monte Carlo I would put this food up there alongside anything we had there - not just technically but in flavour. I ordered a bottle of champagne rosé and a bottle of pouilly fuissé to start the evening, after opening the bottle and getting the glass served not one person who came to the table to serve again. Until the last drip in both bottles no one came. I did it myself off course. Unbelievable. Then I asked to do something special at midnight because it was my friend her birthday. We waited but nothing came. Nothing. Than I paid 297 euro. I gave a small tip because I'm used to do that. So I gave 320 and said it's OK. But they returned with 23 euro. Even that they don't hear.
