I had the pleasure of visiting Boulangerie Bacillus - Dames, and I was delighted by the experience. The people there were very friendly and patient, especially when I was trying to order pastries with my less-than-perfect French pronunciation. It's a rarity to find such understanding and helpful service in Paris. The pastries were a true delight, and the overall ambiance of the shop added to the positive vibes of my visit. If you're looking for a boulangerie with great pastries and a welcoming atmosphere, Boulangerie Bacillus - Dames is a wonderful choice.

Je continue mon tour des meilleures boulangeries de Paris, et je dois dire que Bacillus entre directement dans mon top 3 dĂšs la premiĂšre visite. Le kouign amann est juste Ă  tomber par terre, on lui reproche seulement de se finir en 5 bouchĂ©es tellement on voudrait continuer Ă  savourer ce dĂ©lice. Il est bien beurrĂ©, justement dosĂ© en sucre avec un petit goĂ»t caramĂ©lisĂ©... Celui de chez Bo&Mie, que j'ai trouvĂ© trĂšs sec et peu goĂ»teux, fait pĂąle figure face Ă  celui-ci... La brioche signature "LĂ©on" est excellente, avec un cƓur coulant bien gĂ©nĂ©reux et son petit goĂ»t de cacahuĂštes đŸ€€ La viennoiserie du mois, un carrĂ© briochĂ© avec en son centre une pĂąte style brownie, est Ă©tonnante de gourmandise. C'est rĂ©gressif Ă  souhait, on retombe directement en enfance dĂšs que l'on croque dans ce coeur brownie. La focaccia Ă©tait Ă©galement trĂšs bonne mais pas exempte de dĂ©faut (je lui prĂ©fĂšre celle de chez Graines) : un peu trop salĂ©e Ă  mon goĂ»t et la brioche manquait un peu de moelleux, mais le produit reste de trĂšs haut de gamme. La boutique est trĂšs mignonne, accueillante, je n'ai qu'une hĂąte c'est d'y retourner pour tester d'autres dingueries de chez Bacillus 😍

Io e mio marito siamo entrati per i croissant ma una volta lì, non abbiamo resistito e ci siamo portati a casa anche del pane: ù tutto fatto da loro, nel laboratorio sul retro, in parte a vista. Croissant buonissimi, si sciolgono in bocca, il pane (pain de campagne) era buonissimo, mollica compatta e morbida, croccante fuori, mi ha ricordato un po’ il pane dei forni dalle mie parti a Napoli, assolutamente fantastico. Altre delizie si possono ammirare esposte nelle loro vetrine, prezzo congruo. Ci tornerei, consigliatissimo!

If I could give 10 stars I would. I am but a humble American tourist so my experience is limited, but I am very much a foodie and this was my last meal in Paris. I got a sandwich to-go - the chicken / cheddar panini.

This may be the best sandwich I have ever had in my life. The quality for ~6 euros is beyond anything I will ever get anywhere in the USA. I am certain something smaller and worse quality would be more than double the price here. The many savory lunch options were a very positive sign for me coming in and every component of this sandwich harmonized beautifully into one.

The crusty exterior but soft interior of the grilled panini (which had a nice smoky flavor). The moist/tender chicken that was balanced by the savory, robust flavors of the cheddar, caramelized onions, and tangy Dijon mustard (possibly some mayo too? Unclear - I didn’t read all the ingredients). The tomatoes also added a bit of moistness / lightness that additionally helped balance this sandwich.

THESE FLAVORS SANG AND MY HEART AND STOMACH HEARD. I wasn’t even that hungry but this was just pure delight. Thank you Boulangerie Bacillus - I will never forget...

This bakery is definitely the BEST I tried in Paris!! And I am a real foodie crazy about bread and croissant : I came to Paris for a food trip to try the most bakery as possible (and can tell you I tried most of them!) and this one is absolutely my FAVORITE!! It has something special I can’t find anywhere else! The owner (Solùne, if I remember well) is such a sweetheart, very kind and profesionnal. It was my little treat to come everyday after I discovered it, and enjoy all this amazing products. I totally recommend it and can’t wait to come back to Paris...
