Overall I was a bit disappointed. From the pictures I was expecting a much better culinary experience in terms of flavor combinations, and also dish presentation.
The mise en bouche, was a bit bland and had nothing exciting about it to start the 6 course journey. And it wasn’t because I didn’t have the cheese foam in my dish, because I also tasted the ones with lactose from my girlfriend’s plates, in order to remain true to my review. The sea bass tartare was ok, flavor was interesting, but it had too much of the jelly at the bottom, and nothing very interesting going on with the presentation. Seems like all it takes is to place a slither of radish on top of a plate and it makes it “fine dining”…
Next we had the fois gras with strawberries and pear. I must admit I really enjoyed the pear slithers, which were made crunchy and packed with flavor which combined well with the fois gras. However it didn’t blow my mind.
After that came my favorite dish, the cod, for this one I have nothing to say. Presented very nicely, with textures and flavors that really made your palate happy. Following the fish in one of our menus we substituted the “black angus” with a piece of “wagyu” for an additional 28€. Now I understand that the additional price is for the delicious quality of the wagyu meat, however when you present that plate with only some steamed vegetables on top of a velouté, exactly like with the black angus dish, we have some problems. Besides the fact that the meat was placed on the plate with nothing on top or any type of decoration which to be honest made the meat look very sad. Of course the wagyu was delicious but that’s not really the chef’s merit.
Finally we closed with a desert which was relatively tasty and presented well, ordering also one cocktail from the bar, and we received two as a mistake. I excepted to not have the extra cocktail on my bill but apparently I had to pay for the waiter’s mistake.
Overall I don’t suggest this restaurant since we spent way too much money for what we got, since we left disappointed and still...

I haven't visited any other French-Japanese fusion restaurants in Paris, but I don't think Restaurant Shiro is worthy of this description. The 95 € per person tasting menu consisting of five main courses plus a pre-meal and two desserts, which we took as a party of three, contained some references to Japanese cuisine, which however, in my opinion, are not sufficient to define the restaurant as 'fusion'. The quality and preparation of the food are good, but not excellent. Some dishes, such asthe fowl and fish crudité were fridge-cold and not really enjoyable. We were very disappointed with the drinks. We chose the 'Découverte' wine tasting (one glass of sake and two glasses of wine) for 39 € per person. The quality of the wines served was very poor for such a price and the wines themselves were not properly matched with the dishes. After the bill was paid, we pointed this out to the waiter, who merely asked what we expected from a 'cheaper' tasting (the other tasting was 59 €). Long story short, 117 € for 3 glasses of sake and 6 of wine of average quality and not matched with the dishes. The service was the worst thing about the whole experience. The table, booked two weeks in advance, was right after the hallway on a walking spot, uncomfortable and unattractive. Very noisy room. The staff is nice, but seemed unprepared and confused. We ordered 10 minutes after we had entered, and the first course (a mushroom and chestnut mousse) arrived 40 minutes after we had ordered. The description of the dishes, like the whole service, was flat and rushed, despite being slow. We also saw the surrounding guests receiving pralines and gelèe when receiving the bill. We had none. An experience not to be repeated. For 140 € per person, one can experience much higher...

To start with good parts, raw material is really fresh and cooked to perfection. But it's a pity that taste was not up to the standard.
There was simply no flavor, only the first appetiter was good and interesting (in the pic), rest was bland. Note: it's not plain. It's simply bland, and slightly sweet all along the menu. I appreciate food cooked with some sugar, or dessert including a pinch of salt. but tonight there's no saltiness to balance the sugar in sauce. And it tastes much better when we asked for salt at the table - yes, I know.. I ate a lot out, street food, cafe, bistrot, cafeteria, fine dining with or without stars, it was the very first time ever that I asked for salt. To my defense, we had to "save" our dinner and the evening somehow. The most disappointing point came when we were asked how it went, as bland as the dish, we said exactly our thoughts. And we were told that their food is very light in taste and suggesting we have heavy tasts. The same reply came from another waitress, so aligned and almost instantly replied, making me think that this is THE standard answer, and we are not the only one being honest. Looking around, there is simply smile on the tables in the restaurant, which is never the case if the food is good. You don't even need to taste the food they offer, just use your eyes and see if there's smile. It all made sense, only the high review score. But, I'm not here to solve everything.
