I had the pleasure of trying their 10-course tasting menu, and each dish was a masterpiece. From the innovative Ichintal vegan cheese with pumpkin to the flavorful beef with chaya, every bite was an explosion of taste and creativity. The shrimp with pineapple and chorizo was a standout, as was the cucumber yogurt with mango, which was refreshing and delicious.
One of the highlights was the watermelon and zucchini paired with passion fruit – a perfect balance of sweet and savory. The vegetables with Talente honey and the cauliflower with black garlic were exceptional, offering unique flavors that were both surprising and satisfying. The meal concluded with a delightful beer ice cream with pomelo, a refreshing and unique dessert that left a lasting impression.

Read moreWe visited Quiltro and ordered the 10-Gang Menu, one with the honey wines and one with the combining wines, to really experience the creative cuisine. Almost all dishes were bitesize and mostly vegetarian. They didn't have at that time the only red meat dish on the menu and there was one with 2 thin slices of fish and one which was made with like 1-2 shrimps. However, the bill for two people was over Q. 1200 and we were a bit disappointed with the price of the menu when there were almost no expensive ingredients in any dish. On top of that, you have to pay a mandatory tip of 12%, and what is really making me give them 2 stars, is that they charge you an additional 10% for paying with credit card. So on top of our Q.1200-something bill they charged us 22% more. I found that a shame! Not a lot of people carry Q. 2000 cash in Guatemala due to the danger of being robbed. Furthermore, credit card companies forbid that business overcharge when paying with a card. The main chef was not there that day and I had to pay it but it's a pity because I'm not recommending it and definitely not coming back there...

My partner and I both ordered the ten course tasting menu. Before Quiltro, he had never had a prix fixe menu, and I’d had several across the world (Japan, Southwest Virginia, Prague, etc). We liked the Shrimp and Pineapple, and loved the Cauliflower with Caramelized Milk. Everything else was either unexciting, or highly focused on one bold flavor. I appreciate a bold dish, but I expect bigger flavors to dance with others that are more subtle. Unfortunately, that wasn’t what we experienced. They were often overpowering, sometimes to the point that we didn’t even finish the full dish. I honestly felt guilty that this was my partners first prix fixe experience.
