Very interesting concept with very well prepared and well thought out food. I had a Carbonara with a glass of red and got a light appetizer with bread. The bread, like everything else at the restaurant, was focused on more healthy. Slightly darker flour and with some seeds, which I don't see very often in Italy. In Sweden, where I come from, this type of bread is much more common and I just like this type of bread! This was served with four small sauces which were excellent. The carbonara was very creamy, yet not as chunky as the traditional one can be. If I were forced 😄 to eat Carbonara every day, I would often choose this one for health reasons. For dessert I chose their Tiramisu, also a bit healthier. It had the classic flavors, but was still light. Maybe I would like it a little more creamy and rich, but everything is a balancing act when you strive to make healthier food. I am totally supporting the philosophy behind it, but the final result is the most depressing I have seen in ages. if the endpoint of this concept is taking, for example, a single zucchina, do some elaboration on it (not even so impressive, in my experience), and make it cost 21 EURO, we have lost all sense of reality and sustainability. Even worse, out of the four vegetarian dishes I have tasted, three of them I would not even order again if they were given for free, just based on taste. Again, being vegetarian I was so hopeful to have this restaurant in my town, but it turned out to be a total disappointment (which I am not happy to report at all, but since I kept receiving so many requests of feedback, here we are). However I was very nicely surprised on the choices we picked (Carbonara and the cod). Super tasty and well elaborated. Tiramisu as desert nothing special and a bit over price, I would expect something more hand made or less dry on the cake/biscuit.
Service was very good and I loved the fact of some free tastings in between dishes.
A recommendation, get a menu where you can see what you order. The descriptions of dishes that long makes it confusing and it's simpler to just look at well presented food on an tablet. That avoids to figure out how the dish looks like with 12 different ingredients.
