Ok so the focus is the ramen. Itâs not good, itâs not mediocre, itâs downright bad. Egg isnât Ajitsuke Tamago, itâs not seasoned, itâs not even soft boiled, itâs literally an over cooked hard boiled egg, whoever cut mine didnât do a great job, I got a sliver of yolk. the pork is not chashu, itâs some random cut, and itâs sliced with the grain so itâs tough and chewy. Pick pork shoulder or belly, slowly braise it, chill it overnight in the fridge then slice and donât be so cheap with your tiny portion. The noodles were overcooked, they were over cooked for even regular pasta. -The broth was under-seasoned, I actually asked for soy, it was totally bland and near tasteless. I donât better theyâre really using a tare, I think most likely they whisk in whatever flavour you order into a base stock in the bowl. -no one wants a quarter leaf of cabbage in their ramen, how am I supposed to manoeuvre this with chopsticks and a spoon?
The gyoza are definitely homemade and the sauce that comes with them is good! Unfortunately there is next to nothing in them so youâre essentially eating dumpling wrappers. They havenât folded them properly, either.
These things are so easy to nail, the bowl just screams that whoever is preparing it lost their passion years ago or is just not happy making the food.
At 16 euros for a tea, a ramen with a sliver of tough tasteless pork with 4 gyozas (containing about a tablespoon of pork in all 4 dumplings) and a bowl of plain rice - I think itâs a joke.
Online you can learn how to make top quality ramen, you just have to try. I have actually emailed these guys recipe links in how to fix everything.
People are passionate about ramen in a big way, unfortunately in this case, just not the people making it.
I would have given this 3 stars if it wasnât for the 22 year old waiter aggressively getting in my face forcing me to tell him to back off. Though likely my fault a Japanese man was seated next to me and I asked him his opinion which he said was similar to mine. I gave it a thumbs down and then was told by said waiter that I canât talk to other customers. The bald waiter was very nice and accepted my apology for upsetting the boy.

We had ordered 2 ramen and 1 portion of gyoza initially and added another order of Fried rice with meat.
The Shoyu ramen was under seasoned and while the spicy ramen was pretty tasty the eggs in both were not authentic to what you find in true ramen.
The gyoza was missing the meat with a ratio of 90 percent gyoza wrapping and 10 percent meat.
The meat fried rice was bland with minimal meat, and when we asked for soy sauce we were told we would be charged 1 euro.
We had decided to add another ramen and was told by the waitress it will take 20 mins and we had decided to wait for it after placing the order.
30mins into waiting another waiter comes and asks if we are waiting for anything else. The original waitress comes and proceeds to say âI said it will take 20 minutes, so I thought you didnât want it?â, mind we never explicitly said we didnât want the food, even if it would take 20 minutes; and common sense would dictate that even if we didnât want the food why would we continue to wait in the restaurant.
Overall the food was relatively mediocre and could have been improved, but the service was awful. The waiters were quite lost and unsure of what was going on.

I wasnât hopeful we would find a place, but when I Googled Ramen in Florence, I was pleasantly surprised to find Banki. We went that night and they were out of pork, completely, so broth and noodles it was. We both got the Ramen Combo B that came up with the best pork fried rice (now we know where the pork went!) and and pretty delicious gyoza. I got the Miso Ramen and my Fiance got the Akkanbe Ramen (spicy ramen). I really enjoyed mine with the different broth flavor from the miso and he loved his spicy ramen, so even with no meat, we both still really liked our ramen and it hit the spot.
