If you’re ever in Padova, you don’t want to miss this pizza experience. Yes, pizza experience.

We intended to have a cicchetti lunch, preferably one that involved a table and four chairs, on a sunny Saturday, at 1:00 p.m., when everyone in Padova was descending on the Via del Santo and Via delle Erbe with the same idea and a little more forethought. In one bar after another, the food looked inviting. All of them full. The last joint we approached was spilling people into the street. We looked across the road and saw Balobino. And a table in there. And four chairs.

To the pizza(s). We ordered one to share, then two more, one for each couple, then a fourth pizza, for the table. These pizzas are both thick and lightweight, which is a pretty cool trick. It’s the impasto, of which there were seven varieties (impasto di semi tostati, for example, and impasto carbone, and impasto di Mais Bianco Perla, and so on). They come to the table both crusty and airy and light. We had a 5 Terre, a Margarita al vapore, an Acciuga. All three wonderful. And a couple glasses of local wines, two reds and a white, all good. The service is excellent. We had questions; Christopher and Davide had patience. We stayed until they wanted to close, and then we stayed a little longer, and they brought dessert. All in all, a terrific experience we had not anticipated, which can be the best kind.

If I were ever in Padova again, I would definitely return to Balobino....

C'è un sacco di fermento - scusate il gioco di parole... - intorno agli impasti sempre più esasperati di queste "pizzerie gourmet", che ormai spuntano come funghi. Intanto chiariamo una cosa: una pizzeria gourmet dovrebbe essere un posto dove si fa la pizza classica con ingredienti gourmet, altrimenti va chiamata con un altro nome. Questa non è una pizzeria. La mia esperienza: ho ordinato un cambio di impasto - ingredienti di una, impasto dell'altra - ma l'impasto che volevo era finito. Mi viene proposta un'alternativa "croccante allo stesso modo ma con ingredienti diversi!". Errore mio: ho sbagliato a cambiare, ma sono stato mal consigliato. Il gusto dell'impasto preponderante rispetto al condimento. È la prima volta che mi capita! Ed è questo secondo me il problema: un impasto non può coprire gli ingredienti gourmet che stanno sopra! Altrimenti prendo una fornarina! Poi, una pizza che aveva ingredienti dal sapore importante, la Pepperoni - nduja, peperoncino, formaggio di due tipi e altri ingredienti che non ricordo, forse troppi, anche questa una tendenza della ristorazione moderna, orribile - ma che non sono pervenuti! E questo è indicativo di quello che dico: troppi ingredienti grassi. La focaccia che ho mangiato era completamente sbilanciata in tal senso: tendenza grassa, molto impasto: mi sono dovuto fermare a metà, tutto troppo stucchevole. Ma ho comunque sentito la necessità di mangiare un dolce, perché non ero soddisfatto. Anche questo è indicativo. Ci tornerei? Non lo so, onestamente non credo. Sono qua a casa con una sete implacabile dopo mezza pizza mangiata a digiuno! Non voglio essere il bastian contrario, ma faccio il cuoco da 40 anni: qualcosa di gusto e di ingredienti ne so. E mi dispiace. Perché il locale è davvero bello, forse un po' freddo gli interni, ma questo è un parere personale; il personale fin troppo presente e professionale. Poi una lattina di birra artigianale a € 7,50 è davvero troppo! Ho dovuto ripiegare sulla birra alla spina, un'onesta non filtrata tedesca. La cosa più buona della serata? Il dolce. Quasi da stella Michelin: goloso, equilibrato, preparato con ingredienti piacevoli. Se non era fatto in casa - come mi è stato presentato - un'ottima scelta della pasticceria: ci tornerei per quello! E probabilmente per assaggiare un hamburger: conosco la macelleria Tolin di Vò da anni, una delle migliori che abbia mai incontrato! Totale dell'esperienza: 40 euro. Che dire? Andate e decidete voi. Per me però, 5 stelle...

This is an amazing restaurant that completely changes one’s idea of what “pizza” might be. They have a variety of sourdough crusts that rise higher than one expects—but are surprisingly light and crisp. The choices of toppings are very carefully curated: the anchovies not too salty, all the cheeses balancing the other ingredients, the bresaola the best I’ve ever had!

And our server, Christopher, was wonderful. He told us about the concept and history of the restaurant and the details about ingredients when we asked. Such a pleasure.

I wish they would bring this concept to America. Providence has a great restaurant scene, especially strong on Italian cuisines of all kinds. You would...

We loved this place! When we first arrived they gave us a quick explanation on their history and what they do which I found very nice. Also they had great recommendations and various types of pizzas and breads which I've never tried before and I live in Italy for 4 years so Ive been to a lot of cities including Napoli🙈. Everything we tried was a party in my tastebuds. It was a very different and pleasant experience overall. For the staff, they were very professional and knew what they were doing. But also they were very friendly as well. Atmosphere was also very cute, if you are a tourist in Padova don't leave without visiting this place!

We loved this place! When we first arrived they gave us a quick explanation on their history and what they do which I found very nice. Also they had great recommendations and various types of pizzas and breads which I've never tried before and I live in Italy for 4 years so Ive been to a lot of cities including Napoli🙈. Everything we tried was a party in my tastebuds. It was a very different and pleasant experience overall. For the staff, they were very professional and knew what they were doing. But also they were very friendly as well. Atmosphere was also very cute, if you are a tourist in Padova don't leave without visiting this place!
