I visited Doba on October 2nd, 2024 alone while looking to enjoy a good sunset and I got so much more than what I bargained for. When I say this was probably my favorite meal of all my trips to Italy, it’d probably be an understatement. Let’s start off with the perfection of a house cocktail I had, I saw someone enjoying it and asked for the same and please- just ask for the drink in my picture. I am probably not capturing the entirely of its flavor profile but it is 50% sangria 50% Hugo spritz and 100% delicious. The complimentary amuse bouche was the perfect burst of flavor with three intricate and distinct dishes. The tuna tartare could not have been fresher if they chopped the tuna at my table. It was exquisite- citrusy but not cutting and overwhelming. The flavors complemented each other and really everything else I had after. The ravioli- there are no words. I was going to have just one bite- I literally could not even get a picture it was that good. The house made seafood ravioli with the most heavenly sauce served on the family’s fine China. I could cry. It’s been months and I still think about this. But here is the piece de resistance. I couldn’t decide what dessert I wanted and this was made specifically for me as I said I loved cherries. I don’t particularly like sweets, never have but this brownie/cake with crème fraiche/marscapone is the stuff of dreams. The service, the atmosphere and the views were just perfection. I felt most welcome here after traveling alone throughout the country for 3 weeks. If I ever find myself again in Sicily, Doba will be my first stop.

A top tier dining experience on a rooftop overlooking the Teatro Massimo. This is the kind of place where you expect wedding proposals or someone's x0th anniversary dinner. We had to do the tasting menu as the foodies at our table did not want to make difficult choices with the menu. We did have someone in our group of four who had dietary restrictions (no cow products-meat or dairy, and no chocolate), so we explained this to the chef-owner (who personally greeted us at the table). He and his team came up with customized adjusted creations so our table could enjoy 5 similar flights of food. A Sicilian wine pairing option was offered and I am going to say it could be skipped--the wines did not seem as special as the food (5 glasses of Sicilian wine were just okay). Portions were scaled so five courses were not too many (and some courses had 3 items!). The highlight was the passion fruit sorbetto over a peach compote(?) with nuts. As I write this 10 days after the meal and look at the photos, my mouth is watering. Use your favorite booking app (which gives it top marks in Palermo) to make a reservation. They had plenty of indoor seating, but the evening was perfect to be on the rooftop. Bravo Domenico Basile!

Lo chef tutto fare, beffato dalle ottime recensioni. Volevo provare questo ristorante stuzzicato dall’ammirare la vista dalla terrazza. Finalmente ho prenotato, soprattutto stimolato dalle ottime recensioni, più che altro riferite alla location anziché alla disquisizione delle pietanze. Bene anzi malissimo. Quando vado in un ristorante gourmet, mi aspetto di gustare la prelibatezza di piatti elaborati dalla maestria dello Chef. Peccato che in questo ristorante lo Chef è tutto fare, fa public relation e non sta mai in cucina, almeno durante tutto il tempo della mia cena. Si è presentato presso il nostro tavolo, parlando della sua vita e delle sue esperienze lavorative all’estero Maldive, New York e Parigi. Non capisco cosa abbia potuto apprendere della cucina internazionale alle Maldive e a New York.. Comunque lo Chef per tutta la sera si è presentato presso tutti i tavoli, ha fatto da cameriere e perfino da sommelier consigliando dei vini con un inglese molto maccheronico.. Ma la cosa più allucinante che gli ho visto fare è stata la decantazione di un vino rosso in un decanter. Premetto che ho lavorato presso il (The Ritz Hotel di Londra come Sommelier ), lo chef ha eseguito la decantazione del vivo senza alcuna conoscenza né sapienza, con una velocità tale come se stesse decantando una bottiglia di acqua. Al terminato del travaso, ha lasciato circa 4/5 cm di vino nella bottiglia, ha iniziato ad agitarla (cosa che non va fatta assolutissimamente) dopodiché ha detto ai clienti sempre con il suo inglese maccheronico . “questo se volete lo assaggiate dopo e se vi piace potete anche berlo “🤣 Scusate se mi sono dilungato ma questo aneddoto andava raccontato. Parliamo delle pietanze ordinate. 4 piatti dalla carta, due antipasti e due primi. Qui non mi dilungo! 4 piatti realmente privi di sapori delicati e raffinati. Un primo ripieno al pesce azzurro e finocchietto selvatico (bottoni siciliani ) si sentiva solo il finocchietto selvatico. Stracotto di polipo… lasciamo perdere. Tale e quale per il tagliolino al gambero .. Il coperto € 4,50 e l’acqua filtrata non in litro ma le bottiglie di 3/4 € 3 la liscia e €3,50 la gassata. Veramente uno spreco di denaro. Aggiungiamo anche che tra l’ antipasto e il primo è passata un ora, e in questo frangente è venuta al tavolo prima la signora bionda della reception e dopo mezz’ora anche la chef a chiedere se avessimo gradito e se volevamo un dessert. Ad entrambi abbiamo detto che aspettavamo ancora i primi. Questa gravissima mancanza in un ristorante gourmet ,dove paghi anche il servizio, fa capire che lo chef non ha la minima contezza dell’andamento del servizio nel chiamare alla cucina la preparazione della pietanza successiva. L’ordine delle comande tra il ristorante e la cucina è inesistente. Non capisco dove e come abbia lavorato questo chef. Il ristorante è frequentato da turisti erano tutti stranieri allettati dal gustare piatti prelibati. Quando siamo andati via , con la sala ancora piena , lo chef era seduto in terrazza con dei clienti che sorseggiavano un bicchiere di vino. Tutte le pietanze di questo “prestigioso” e giovanissimo chef (39/40 anni) non sono opera della maestria delle sue mani, ma di qualcun altro. Concludo dicendo che la vista è stupenda, ma per ammirarla occorre alzarsi perché c’è un muro alto circa 1 metro o più, che da seduto ostacola la vista. La terrazza è striminzita e tavoli piccoli e vicini. Anziché un viaggio nei sapori ho solo fatto uno spreco di denaro. Sono amareggiato e molto ma molto deluso . NON LO CONSIGLIO...
