Popped in for lunch on Friday at noon. Each dish was a work of art. We had gnocchi with snails, tagliatelle with porcini mushrooms (in season), and the zucchini dish. Each presented harmonious combinations of flavors and textures. They provided a basket of sour dough bread that was perfect for getting the last bits of sauce. Presentations were colorful and artistic. The service was friendly and efficient. The restroom was very clean with a design that would be very accessible to persons with disabilities / wheelchairs. So glad we found them.

Amending my review to say that we enjoyed it so much we decided to make it our last meal in Parma before catching the train to Milano. Today the new dishes tried were the bucatini with asparagus & caviar, and spaghetti with coconut, cashews, & oysters. Everything was as perfect...

Every dish is an experience, the chef here is very creative, using local ingredients and turning them into a culinary delight. The cheese plate and the charcuterie plate accompanied by 2 chutneys were surprisingly different and delicious. Next came the rabbit ravioli, "Fuhgeddaboudit". Whoever said you can't replace risotto with barley, this was on another level, not to mention there was a portion of sheep tartare from a local farmer in the middle of that dish. And the grand finale was the pork neck in a soy reduction and an amazing apple sauce with grilled pak choi. I opted for a homemade cake "La Caprese", a specialty of the Campania region, consisting of white chocolate and almonds. As for the service it is home style. Gli stessi consigli del gioviale avvocato parmense che mi avevano fatto scoprire La Valle, questa volta mi hanno condotto al Cortex Bistrot. Dalle verdeggianti colline sopra a Fidenza alle strette vie del centro di Parma, surriscaldate dai raggi di sole dei primi, veri, giorni d’estate.

Dentro perΓ² si sta bene, un ambiente informale fra scaffali di libri e bottiglie che celebrano stappature passate, le ragazze che ci hanno accolto e si sono prese cura di noi sempre pazienti e cortesi, nonostante fossimo una compagnia numerosa e magari con qualche richiesta di troppo.

La cucina di Cortex mi Γ¨ piaciuta parecchio, articolata senza essere eccessiva, fresca e originale nella scelta degli ingredienti con un risultato sempre ben centrato, puoi trovare delicatezza dove magari ti aspetteresti intensitΓ , oppure l’esatto contrario.

La carta dei vini è stata un vero parco giochi, da togliersi ogni possibile voglia senza svenarsi. In qualità di alcolizzato aziendale i colleghi, mediamente 20 anni più giovani, mi hanno lasciato carta bianca e io, da anziano, ne ho approfittato. Avevano una gran sete, si sono comportati assai bene 😎

Dentro perΓ² si sta bene, un ambiente informale fra scaffali di libri e bottiglie che celebrano stappature passate, le ragazze che ci hanno accolto e si sono prese cura di noi sempre pazienti e cortesi, nonostante fossimo una compagnia numerosa e magari con qualche richiesta di troppo. La cucina di Cortex mi Γ¨ piaciuta parecchio, articolata senza essere eccessiva, fresca e originale nella scelta degli ingredienti con un risultato sempre ben centrato, puoi trovare delicatezza dove magari ti aspetteresti intensitΓ , oppure l’esatto contrario. La carta dei vini Γ¨ stata un vero parco giochi, da togliersi ogni possibile voglia senza svenarsi. In qualitΓ  di alcolizzato aziendale i colleghi, mediamente 20 anni piΓΉ giovani, mi hanno lasciato carta bianca e io, da anziano, ne ho approfittato.
