This was my worst meal in 2 weeks in Italy. The sauce on the ravioli had separated, but I let this slide. However, when my steak came out not only was it undercooked but even the outside was cold. That steak had not been cooked/on a grill within the last 30 minutes. I'm not sure if they let it sit waiting for the side or prepared it at the beginning of their day, but it wasn't fresh at all. Worse than the technical issues, was their handling of my complaints. They could take my order and talk about where I was from in English just fine, But when I started to complain about the food suddenly they didn't understand. They took no ownership of the mistake, and didn't even offer an apology. It took two requests to get the receipt corrected and the steak that I sent back removed.
I have no idea how this place ended up on the TripAdvisor top restaurants in Rome but I would strongly recommend going elsewhere.
Update To answer questions and I'll include a picture of the "medium" steak so the public can see what I'm talking about.
To begin, you seem to be misunderstanding there were TWO issues. The steak was under cooked AND it came out cold (it set too long "resting" despite the excessive waits, a sign of a disorganized restaurant). You see, even a rare steak as you sent me that was seared on the outside and left to rest for an appropriate FEW minutes will still be warm to touch on the OUTSIDE. I did try one bite, the small piece you see at the bottom of the picture and it was not warm, nor was the outside of the other pieces to touch. The reason I did not mention the pasta was because I still had another dish coming out and didn't want to tempt anyone to spit in my food. Which judging by the way y'all take criticism in your response below, I'm glad I didn't do. I finished it because I was still very hungry at that point, as I still was when I left your restaurant, and at least the dish was warm. I went to the restroom after asking for the check because I saw how slowly your staff worked during the rest of the meal and I wanted to minimize the amount of further wasted time in your restaurant. Additionally, I wanted to move on quickly as I knew I would have to stop elsewhere for food on the way back to the hotel and wanted to get there before they closed lunch service. This is also why I didn't touch the fries because I didn't want to fill up on carbs when I knew I'd be stopping somewhere else for some actual protein. Once entered the Restaurant , I immediately breathed the perfect combination of Piedmontese good manners (sometimes too formal, alas) and the friendliness and cordiality that characterizes restaurants in Rome. Not only that, if the recreated atmosphere is just a perfect marriage between "what you expect in Rome" and what Piedmont is, the same must be said of the place.
A place with typical 70s vibes (not roughly recreated but renovated from the original), with original but not misplaced colors. The service in a perfect balance between informal and formal. Little details makes the difference, as dishes paired to the main color of the restaurant, furnishings etc. In short: the atmosphere of I GOLIARDI Rome is absolutely studied and proposed at the best.
The cuisine offered is typically Piedmontese and, to be honest, you rarely eat faithful dishes prepared with care in this format, even in Piedmont. The choice of wines is (for once) commensurate and related to the menu. Here the wines proposed are really targeted and studied on the basis of the dishes, which in itself seems obvious, but it is not: this is probably also thanks to the Sommelier. In short: a perfectly consistent wine list, for the dishes and for everyone's standards (tip: let the staff advise you with the "off menu" and wines).
The staff: flawless. Not very intrusive (personally I don't like overly apprehensive services), but punctual and available for any information, of technical or non-technical nature.
Personal autumn suggestion: tagliolini with Alba white truffle paired with a glass of Erbaluce di Caluso, a good dessert, a glass of Barolo Chinato and a walk to Villa Borghese or Piazza di Spagna (close to there). YOU...

We accepted the "flavors will blow our mind" recommendations by our server regarding our secondi (2nd course). We received our 2nd course and we couldn't go past 2 bites. We were very disappointed. They just didn't taste good. The quail dish was bland and colorless. The pork cheek was presented as this brown meat puddle reminiscent of... well, look at the photo. The flavors were akin to spoiling ingredients. The manager asked us what was wrong with the food and we stated that the food was not edible. We were going to throw up if we ate any more. We asked for the check so we can pay and move on to something more delicious. We still had to pay for the secondi. The manager probably thought we didn't know good Italian food as he seemed to speak down to us. Having travelled to more than 60 countries and dined in excellent restaurants around the world, this is a restaurant I would completely avoid.
If you still choose to still try this restaurant, we recommend the pastas we had (the 2 dishes had truffle in them) but we wouldn't recommend their secondi options.
The service was okay. Broken English but we were able to have some level of comfort while being there. Of course, we were in Italy so I understand that there may be times of challenging communication. We're the visitors so we're happy to experience their culture.
