We got both the Kuro-Uma Shoyu based ramen and the Aka-Uma rich tonkotsu ramen.
Both were really good. It's hard to pick which one was better as they are both different styles but you can't go wrong with either one.
The Shoyu based ramen does not have the ability to pick noodle firmness as they use a special noodle. The broth is thinner and less oily than the tonkotsu but still has a nice flavour profile, naturally more salty/soy sauce leaning.
The rich tonkotsu is thicker, creamier and with a more velvety mouth feel and extremely moreish. It's a bit heavier to eat as expected and has a deeper and richer flavour profile.
The egg was one of the highlights! Perfectly cooked with a lovely soft yolk.
The gyoza was decent. I'm not a massive gyoza fan in general but they were good.

Ramen here is pretty good, but I remembered it being better last year. I think I've tried so many great ramen shops that my palate is almost japanese lol. It's a tonkotsu type of ramen and although it's not as intense as others I think it's still really good and well done, definitely better than Ichiran.
The place is very crowded on weekends and you have to wait in line but I still think it's worth trying. They have several choices but I would say my favorite is the one with extra chashu, the meat is very flavorful and juicy.

The tonkotsu broth was creamy and delicious, the cha shu was tender, and the assorted ingredients complemented the ramen well. The noodles also had a soft, springy texture that was very appetising. Each mouthful of ramen could also be modified by their red ginger, garlic, and other side dishes!
The other dishes such as the cha han and dumplings were also delicious and power houses of their own.
