Two trays with home made, rolled pork belly were resting just behind of where we were seated. Now, I don't know how you'd feel about that when you're hungry and waiting for your food. Luckily, our order arrived quickly and 'twas delightful. We got the ramen with additional pork belly and the kimchi one. Now, with the additional pork belly, I got one more slice than the other dish had so...I'd probably still get the one with the additional slice but whatever. Very friendly owner as well. He told me about five times to watch my head when standing up because the whole establishment is adjusted to only fit Japanese people inside. Jk, there was a beam on the ceiling.

Would definitely visit again. The photos on the wall are a nice touch and date way back. The oldest one within our vicinity was from 2002. There's photos that seem to be far older but they lack a date so maybe one could talk to the owner to find out. I didn't because I was...

The ideal ramen shop experience

As with most good restaurants, the focus here is on a single dish in order to perfect it, with an excellent result. There is actually only one dish on the menu, which can be customised with different toppings or in size, but that's all it needs. The broth is intensely flavoured, but not too salty. But the absolute highlight was the choshu, perfectly prepared and when the meat soaks up the broth, there is an explosion of flavour with every bite.

The guests include both locals and tourists, which is always a good sign for quality. So if you're in Kanazawa and looking for a perfect ramen shop experience, you've come to the...

One table with TV blaring over it + bar counter. The only beer - in cans. Can't say anything about the food myself - I didn't get served (likely to do with the language barrier, but by the time we realised what was going on - decided it wasn't worth it). Rest of the family complained the food was way too salty. To make matters worse - a local guy was eating next to me (we sat at the counter) and making really loud and absolutely disgusting noises. I mean - I get it - that's how they eat ramen here, but I still don't want them to do it right into my face. A really disappointing way to end an otherwise wonderful day...

One of the coolest ramen bars that I have seen in Japan. I don’t know how many pictures of customers were in there BUT there were enough to completely cover the walls. It’s a one-man-show and the owner is super friendly. The portion size is super generous. I was really craving some ramen on a chiller night so I opted for the XL bowl and it was way bigger than I imagined (most large bowls aren’t even that big in Japan). I had the char siu ramen with soy sauce based broth and it was very good! Noodles had a great chew and the sweet green onions complemented the saltiness of the broth well.

This is truly a one man operation, and if history reads correctly, this place is a generation or more in operation The owner is taciturn — saying little while delivering a delicious bowl of ramen with pork, kimchi and more. He even heats each bowl with boiling water to ensure the ramen is delivered hot much like a good bartender chills a martini glass. It’s all in the details, and the ramen tastes it. The bowls are sizable but inexpensive. For fantastic ramen, this place simply cannot be beat.
