The cocktail bar is inside the Six Senses hotel. I arrived at the entrance and the staff immediately showed me the way. When I entered I was amazed by the interior. Then I met Adrian, the bartender who crafted the menu. He explained the whole concept and vision of the bar and the Six Senses brand, that looks forward to full sustainability and reducing the carbon footprint as much as they can. All spirits come from Japan, and the tasting of the Negroni with the Sake vermouth was something else (They also have a Japanese Fernet!!) I had the "Garden Gimlet", the "Talkin to Me?" and the "Outskirts". All of them, well balanced and with personality, with the Outskirts that ended up being my favourite, as a Old Fashioned fanatic. There was a bartender in residency from Spain, Adrian, who offered incredibly well-balanced and delicious cocktails. I had his riff off an old fashioned called “Outskirts,” which was made with a local whiskey, lacto-fermented peaches and local bitters. The drink was so smooth and delicious. I also tried The sun always rises,” which was a citrusy/herbaceous vodka drink that was perfect for the muggy June evening. Read moreNine Tails is best bars I’ve been to in Kyoto, but also feels like a local's secret. The space is beautiful, thoughtfully designed, but still super inviting. They serve exclusively Japanese alcohol, But can make any request with little tweaks. I had the Hinoki Martini, and it was incredible. Such a great take on a classic drink, light, smooth, with this amazing hint of hinoki that makes it feel totally unique without overdoing it.
