Bistro Sumire — Restaurant in Osaka

I had a 6 course dinner with some white wine. The food was overall good, but some of the dishes were a bit experimental and failed to bring out the ingredients' potential. My biggest complaint would be the wine; It was frankly terrible, very acidic, like vinegar, an extremely cheap blended white. I was charged about 10000 yen for a glass. Overall, this restaurant is a bit of a mixed bag, but definitely avoid the wine unless you recognize the bottle. The first dish was cold cuts of pork: it is palatable, but lacking and plain compared to a typical chartucerie board. The second dish was what seems to be a french onion pie with a salad and some drizzled butter. I think the flavor profile for this dish is ok, but simplistic for my taste, and the pie lacked freshness. There is a reason french onion soup has swiss, gruyere, and garnish. The third dish is a large chunk of smoked salmon with some pickled lotus and carrot. All I can say is this is not how smoked salmon should be served. The smoked salmon itself had no depth of flavor. The fourth dish was a crab roll with probably lobster sauce. A more conventional dish that was extremely delicious. The fifth dish was stewed beef. It was soft as if sous vide, the taste and texture was good, but too simple to stand on its own. The onion, lotus, and hatch chili do not offer anything to this dish. The dessert was great, vanilla ice cream, some sort of coffee and nut ice cream, chocolate brownie, frozen yogurt, persimmons, and apple. The tea that came with it was...
