We ordered a beef noodle and a cold roll set most of the ingredients are there..
Just some suggestion and its easy to make it more authentic Vietnamese. (not sure if chef is Vietnamese, also not sure if ingredients are easy to get here in Japan).
For the cold roll. Add some rice noodle vermicelli in the cold roll..it's cheap to do and make the roll more substantial. Some people have the shiso leaves in the roll too. Our is the purple version. but if you got mint and coriander leaves it will be more authentic.
For the pho Most important thing is the broth ! Like a good ramen, the broth form the back bone for this dish. If the broth fail the whole dish fall apart.The internet has many good suggestions for the broth.
Few basic steps
Start with good amount of beef bone and ox tail to generous amount of water that cover the bones and discard that water after a few minutes of boiling. Wash the bone and ox tails then to a new pot of water.
In the new pot have onion, white raddish, ginger, AND pho flavouring ( mall amount of cinamon, cloves, star anise and coriander seed wrap in a cloth bag )
Bring the water to boil and simmer for 4 hours plus ( the longer the better ) remove froth on top of the pot as you go along.
Add fish sauce, sugar and unami to taste (good broth does not need unami) very brief description here but internet has many good recipes.
We enjoy our dinner there just wish it to be more authentic. You got everything else covered...

As a Vietnamese person the food wasn’t amazing and authentic but of course it won’t taste like back home, the bánh mì was decent especially the bread itself was amazing and the pho taste a little more like Hu Tiêu which I didn’t mind especially not having Vietnamese food while I was here in Japan. When it comes to service I enjoyed it, went to go up for drink and the salad bar and by the time I finished my food as already on the table, go pay Michelin prices if you want amazing service which you can’t expect from a cafe in a train station. Seeing Vietnamese people bash this place is quite funny and typical around the world not supporting each other but bringing each other down. The service was quick, friendly and they accommodated the changed we wanted to make for the lunch set. We had seen many reviews complaining about the pho not tasting as authentic.
