Hikime — Restaurant in Otaru

We came to HiKime for lunch and chose the set menu. We were seated at the bar, which turned out to be a great choice—it gave us a perfect view of the sushi chef at work, as well as a glimpse into the rest of the kitchen.

Watching the chef prepare the sushi was a highlight in itself. He worked with such calm precision, yet moved skillfully and efficiently. It was fascinating to see how years of experience translate into effortless movements and beautiful presentation.

The sushi was fresh and delicious, and the accompanying dishes were all flavorful and well-balanced. The quality and attention to detail really stood out.

Service can be on the slower side, as the chef prepares everything himself—but it’s absolutely worth the wait. That said, if you're visiting as part of a tour or are on a tight schedule, it's worth keeping your timing in mind.

구글맵에서 처음 리뷰 씁니다.(굳이) 저는 한국인이고, 스시를 굉장히 좋아합니다. 한국분들은 이 리뷰를 읽으시고 고객과 식당 모두 윈윈하셨으면 하는 마음에 작성합니다.

진짜 맛있음. 정말로 맛있음. 개맛있음.

저는 강원도에서 태어나 회를 정말 많이 먹어봤어요. 그리고 스시에 돈을 아끼지 않고 강원도에서 부터 청담, 서래마을 오마카세, 더불어 삿포로 오마카세로 비싼 돈과 시간을 할애하여 스시 먹는 것을 좋아합니다. 근데 여기 정말 맛있어요. (왜 안유명하지? 이해를 못하겠네) 이 스시집은 한국에 있었더라면 1년치 예약이 꽉 차서 먹을 수 없는 맛집에 해당합니다. 또한, 삿포로에서 맛있다고 한 스시집 갔다가 한국보다 맛이 없어서 실망을 크기 한 상태에서 스시도코로 히키메를 오니 ... 정말 ... 하 .... 진짜 줠라 맛있어요.

저는 2300엔 셋트를 시켰습니다. 가격이 합리적이구요. 게를 넣은 장국이 몸보신+해장 되고 계란찜안에 해산물, 밤이 들어가있어요. 계란이 이렇게 부드러웠나요 ? (존맛탱) 초밥은 그냥 다 맛있습니다. 진짜 맛있어요. 추가로 계란초밥 시켰는데 좀 차갑? 미지근? 하게 나오거든요? 근데 이게 진짜 맛있어요.

메인 쉐프님이 어르신인데요. 손도 빠르십니다. 두분께서 초밥 만드시고, 한 분이 서버, 카운터 보시는데 가족같아요. 직원분 모두 수줍워하지만 친절합니다.

미스터초밥왕 모티브, 미슐랭 이런데 가서 맛없는 초밥, 찬밥 신세 되지 마시고 이 곳에 와서 누리세요. 정말 아름다운 가게입니다.
