ย ย ย Read moreStumbled upon the place on Instagram and decided to give it a try. Iโm guessing the shop suddenly gained traction from the same post I saw as they could not keep up with the demand. This is possibly one of worst cases of understaffing Iโve ever witnessed in my life.
I had the amazake latte with both of the snacks available at the shop, which I had to wait more than an hour for. Coffee was of good quality, tasted good and relatively creative coming from a former barista myself, but not impressive enough for what I had to wait an hour for.
From my observation, it took them (2 people) 7-10 mins to serve per person on average. I understand and respect the dedication to quality, but I feel like theyโve reached the stage where they need to work on the quantity aspect. Plus the fact that there were only 4 seats available within the shop, and they donโt give out lids for hot coffee so we donโt have the option of take-out to go. I was lucky enough to secure a seating but I still simply couldnโt enjoy my coffee, as I feel a entire block of people in line was rushing me to leave, so I basically had to chug the thing.
Moral of the story, as a former barista who worked in NYC, no one should wait for an hour for a cup of coffee even if itโs the best cup of coffee in Tokyo. Different story if it were a sit down cafe with a wide food variety and wifi access โ this shop had none of that, itโs just a cup of coffee. The customer base is also 98% tourists, whom many like me travelled distances to try out this local specialty, so giving up midway would not be an option. The management need to do...

I went at around 2:50PM and I got my coffee at around 4PM so you can imagine I was so ready to throw hands but one sip and I was proved wrong. I got their rich latte with Bongen original blend and oatmilk (iced). I was going to go for the flat white but I changed my mind last minute when I asked the difference and the lady told me the rich latte has 3 espresso shots, the flat white 2. I really wanted caffeine and I wanted to taste the coffee. I am happy to say that there will be a next time and Iโll probably go for the flat white at that point. The service was super good. Despite taking 1h to get a coffee, the queue wasnโt super bad. I really got the impression that they took their time to make coffee and to give everyone the attention and information they deserve to make it a good experience. At least this was also how I felt when it was almost my turn and I was queuing inside the store. The place is also tiny and there was only one barista for most of the time, someone else arrived at around 3:30PM but Iโm not sure if it was for support or for a shift change (so maybe after 4PM they are faster since itโs two people making coffee). I really liked the atmosphere and I might buy their drip coffee as well next time, or the cold brew.
