You may expect the first part of a restaurant review to be about the food, but with Coucagno (although the food is exquisite) it's the service that really puts it head and shoulders above the other restaurants in the area. Upon our arrival at the restaurant on the 40th floor of the Cerulean Tower Tokyu Hotel, the maître d′ (I assume) led us to our table--located directly beside one of the many plate glass windows offering sweeping, breathtaking views of Shibuya--and pointed out city landmarks and other highlights visible from our chairs (she indicated the direction in which we might see Mt. Fuji and pointed out that the moon, which was directly in our view, was an unusually deep shade of orange). Our waiter (and all other waitstaff) was fantastic, polite, kind, and extremely professional. Before every course, our waiter explained every item placed in front of us and asked if we had any questions. The service we received was of the highest tier.

I admit I'm not an expert when it comes to French cuisine so I'm disappointed not to be able to offer a course-by-course breakdown of our meal. What I do remember is that for our respective entrees, I ordered the pigeon and my fiancée ordered the guinea fowl. Both dishes were thoughtfully and beautifully prepared, subtle and nuanced, but also clearly delicious.

Coucagno was such a treat!

We were a fairly large party of seven, so they graciously gave us a private room. The menus were presented on iPads, which made us wonder if it was for translation purposes. Personally, I would’ve preferred paper menus to keep things more traditional and avoid electronics at the table.

There was a bit of a language barrier, but the servers did their best to explain each dish and assist us however they could.

Prepare for many courses and very small portions—but everything was light, artful, and absolutely delightful. I was especially impressed that they were able to accommodate my vegan friend with custom dishes on the spot. One of the first things served was bread, which I suspected was meant to help fill us up early.

I especially enjoyed the duck and chicken pâté en croûte—it was delicious with the perfect texture. My favorite part of the meal was the two desserts. The first featured a rich chocolate pudding, brownie, and a unique gummy-like chocolate that was unlike anything I’ve had before. The second dessert brought back childhood memories with its whimsical presentation of flowers and a ladybug—it was edible art, and I really appreciated the creativity.

What truly tied the entire experience together was the breathtaking view of the Tokyo skyline....

Le meilleur de la France et du Japon réunis : Une très belle expérience gastronomique à Tokyo autour du menu "Champs Elysées" proposé par le Grand Chef Nobuhiko FUKUDA (un ancien de chez Rostang à Paris...) et servi par le très agréable Maître d'Hôtel Takeshi TORII. Le "pressé de homard Breton, légumes d'été, glace à la mangue et fleur de sel" est juste parfaitement réalisé ; On pourrait redouter un mélange de saveurs prétentieux mais bien au contraire l'approche japonaise fait ici dans la plus grande subtilité et finesse, du grand art à n'en pas douter, et un excellent exemple d'adaptation niponne du savoir-faire Français La "rascasse poêlée en écailles de St Jacques, jus de bouillabaisse" pourrait être servie à Marseille : Cuisson et assaisonnement parfaitement réalisés, saveurs très authentiques, seule la St Jacques, pourtant très fraîche et cuite à la perfection, est un peu "étouffée" par la richesse du goût de la rascasse, mais il ne peut en être autrement dans cette association. Le "pigeon en croûte de sel" est un grand moment pour l'amateur de ce volatile : proposé en 2 services (le suprême en croûte de sel et la cuisse rôtie) est d'une tendreté rare, la sauce (type "marchand de vin" améliorée) parfaitement adaptée, et les rince-doigts vous incitent à rogner les os sans complexe malgré le cadre "haut de gamme" ! Enfin, le dessert signé Laurent Jeannin (du Bristol) parait sortir des cuisines d'Eric Frechon tant il est réalisé à la perfection : "Cerises flambées et soufflé à pistache" sont un régal tant pour les yeux que pour les papilles, un feu d'artifices de saveurs et textures qui cloture ce diner en un superbe bouquet final. Ajoutons à cela des pains "maison" frais et variés ("vraies" boulangerie et pâtisserie intégrées aux cuisines de l'hôtel, suffisamment rare pour être précisé), une très belle carte de vins servis à parfaite température dans des verres adaptés, bien des établissements français réputés pourraient s'inspirer de ce qui se fait ici avec talent, générosité et humilité ! Et la vue panoramique depuis le 40è étage du Tokyu Cerulean Tower Hotel ne fait qu'ajouter à la majesté du moment. Je viens régulièrement à Tokyo depuis 10 ans et c'est un repas qui figure incontestablement sur mon podium des grandes...
