We went to Yamazato/Sushi counter at the Hotel Okura last night. We were greeted by Chef Usuba, and ordered the omakase, which essentially lets the sushi chef serve you his menu for that day. Every course was explained by the chef so we could actually discover and taste what we were having; not always the case in a normal Japanese restaurant. He also explained that at his place, they slightly age the sushi to make it more scrumptious, which it really was! His English was very good, which made for a more convivial experience rather than dine in silence. I have been eating Japanese food for years, but this was the first time that I felt that I...

Styled as “kappo”, we were served over 16 courses of the freshest food that Japan has to offer, and all prepared by these chefs right in front of us.
