My wife and I recently enjoyed a delightful lunch at Manpuku in Ginza. We savored their chuukasoba, a historical and flavorful ramen with a slightly sweet, shoyu-seasoned broth and springy noodles. 連日の猛暑に美味しい冷やしラーメンを求めてこちらを訪問。東銀座にある大正時代創業の有名老舗町中華です。平日12時30分頃到着で8人待ち。この日はワンオペの貼り紙があり20分程での入店。入店すると普段ホールを担当されている女性がおらず調理担当2人のうちの1人がホールを兼務されていました。厳密にはワンオペではありませんがいずれにせよ大変そうです。冷しそばとりごま味大盛を口頭注文して大人しく待ちます。

待つこと10分弱で着丼。具材は鶏チャーシュー/きゅうり/錦糸卵。鶏チャーシューがたっぷり盛られています。きゅうりと卵と一緒に麺をひと口。ごまダレが濃厚でマイルドです。甘味や酸味は醤油マヨに近いイメージですがラー油が加えられているのでマイルド過ぎずとても美味しい。やや濃いめの味付けも汗をかいた身体に染みます。麺は恐らく中華そばと同じ中細縮れ麺でツルモチ食感。タレとの絡みが素晴らしい。鶏チャーシューも適度な弾力で美味。きゅうりや卵の太さを麺と揃えるなど食べやすさにも気が配られていて流石です。特別変わった素材を使うわけでもなく丁寧な調理で全体のバランスが計算されている冷しだと思います。ご馳走さまでした！！！ ※8月18日〜25日は設備改修で休業のようですのでご注意あれ。

大正時代に屋台から始まったこちら。現在は3代目店主が営む老舗です。平日13時前で3人待ち。タイミングが良かったようで3分程で入店。暑い日でしたが夏期のみの冷しそばはまだ開始されてなかったので基本の中華そばを注文しました。

5分弱で着丼。具材はチャーシュー/メンマ/ほうれん草/ナルト/薄焼き玉子。三角形の薄焼き玉子が特徴的。こちら以外だと渋谷のアートマサシヤが思い浮かびます。スープをひと口。ほのかに生姜の風味が香る鶏ガラ醤油でカエシはまろやか。ほのかにネギ油も香ります。中細縮れ麺はツルモチ食感。とてもオーソドックスなラーメンですがしみじみ美味しい。ご馳走さまでした！！
