I consider myself a top Japanese foodie and have eaten at over 200 sushi bars in Japan and 300 Michelin restaurants in the world, and I must say this is my most favorite sushi spot as well as one of the top 5 restaurants anywhere now. A young aspiring chef directly buys fish from the top fishermen throughout Japan, not from Toyosu market, as he so much cares about the quality of fish, and serves some of the most unqiue and flavorful sushi with his excellent skills. Be warned, this is not a sushi bar for those who want to eat fatty tuna, ikura and uni, many of them the chef does not even serve unless best ones come on that day. His sushi is quite different from unami-driven aged edomae sushi that are popular in Tokyo as well as loved by Michlien. Many of fish you have here are likely to be kinds of fish you have never had before, mostly being rare white fish even most Japanese do not know. I recommend you to come here only if you have tried many top sushi bars in Japan or Asia, and a bit tired of similar tasting sushi pieces and dishes. If you consider yourself an avid sushi lover or foodie it is worth trying this place and see how you feel it. In my opinion the quality of fish and how he executes them as sushi or meal is by far superior to most sushi bars in Tokyo and any fish you get in the best restaurants in the world. It is already favored by some top Michelin chefs in Tokyo, but not well known yet even among Japanese foodies and still fairly easy to book. Their sommelier can speak English to some degree. You can book it online in advance. True gem.
