Another 7°C cold rainy Saturday, so perfect time for some hot ramen! Been wanting to try らーめん飛粋 and see why they made it onto #Tablelog best 100 Ramen list for 7 years in a row. Arrived at 12:00pm noon, and as expected, the line was crazy long. Decided to head over to Costco Kawasaki to pick some things up, then I would swing back again and hopefully the line would be a little shorter. My plan worked. I did my shopping and came back at 2:09pm to find that there were only 14 people waiting on the line. After a few minutes in the rain, a worker emerged and instructed me to enter the shop and purchase my tickets from their vending machine. Ordered their Special Ramen (特製らーめん) for 1300 yen, got it upsized to medium size (中盛り) for extra 100 yen, and also added their Chashu over rice bowl (肉玉丼) for 400 yen. Went back outside to get back on the line and wait. The worker came back out to collect my tickets and asked me to choose how I wanted the ramen prepared. For the NOODLES, you can choose HARD, NORMAL, or SOFT. For the SOUP you can choose STRONG, NORMAL, or LIGHT. And for the OIL you can choose MORE, NORMAL, or LESS. For my options, I chose HARD, STRONG, MORE. Was then asked what I wanted to come out first, the ramen or the meat bowl- I chose the meat bowl. Only had to wait a little longer than 10 mins and was then ushered into the store.
My meat bowl came out first, with raw egg yolk on top. Using my chopsticks broke the yolk and mixed it into the meat and dug in. The chashu had a very nice BBQ-like flavor to it and was really yummy. Less than 1 minute later, I was presented with my ramen. First tasted the soup which had a very pork boney creaminess to it and then a slight chicken-esque aftertaste creeps in. I can see how some people can say the taste is a little "gamey" but one could also say that is what makes it taste very "homey". The wide wavey noodles had a nice bite to it, like al-dente if you will, hence me choosing HARD as my option for the noodles. And then I tried a slice of the chashu, on the thin side and had a very delicate very delicious taste. The special version also comes with a seasoned egg that was perfectly seasoned and especially yummy. Highly recommend! I regret not ordering the LARGE upsize [大盛り] as my noodles ran out first. That didn't stop me from finishing every last drop of soup. I thoroughly enjoyed eating here and will definitely return back here once again. Thank you for a...

(ig @wei.oframen for my ramen log 😳)
I might have gone a bit too overkill on the toppings lmao. Extra iwanori on top of the tokusei ended up covering everything you can't even see the beautiful color of the broth anymore. This bowl set a high expectation for the Iekei bowls to come as it was my first proper Iekei bowl ever. Hiiki is known to be one of the best Iekei shops in Japan but unlike other Iekei shops, their approach to the genre is toward the more elegant side. Most people just look for a heavy-hitting, impactful bowl to energize for the day, the broth at Hiiki was so delicate and refined. If you look at their recently renovated shop, they do look more like a...
