Seito Masamune is a delicious tantanmen restaurant located in Arkhills. You buy your ticket from a vending machine, and as you can see from the photos there are a few different options of style and spice. You can also get the noodles without the broth, so it’s basically just noodles and sauce, and you can get a set that has the sauce over rice. They can adjust the spice too, and you may choose from mild, normal, or hot. I had the medium spicy downtown spicy, with a side of wonton, and they also provide a poached egg that you can crack and put in the soup (you can choose to order without it as well). The flavors were rich with that delicious Chinese Sichuan spicy in the broth, the perfect thing to warm you up on a cold day. The prices, as with most ramen places, are beyond reasonable. The chef, realizing I had no idea how to order, since I look 100% American with no Japanese speaking skills. The chef came from behind the counter to help with ordering she took me to a kiosk type of machine that I order from, and it kicks out a ticket for the chef. Very efficient. I sat while the chef made my meal. I cant tell you what it was called, but it was a soup based Ramen type of meal. It had noodles, meat, vegetables, peanuts and some heat to go along with that unfamiliar flavor. My first taste hooked me immediately. This was the best thing I've tasted since being in japan for my short 2 week vacation. Read moreWhat a moment! Had been chasing the dan dan / tantan style ramen during this trip and found this little gem. The spice was there - you get to choose three levels, low, medium, hot (and the hot had double the 🔥🔥 of the medium). I went medium and I probably could have taken it up a notch. The spice was there but so was the tingle from the Sichuan pepper corns. With my order came a small serve of mapo tofu with rice which was also delicious and nice heat.
