Sushi Fujitora — Restaurant in Toyama

Some of the best sushi you can find at this price point. The chutoro, botan ebi, and castella tamago are excellent, and can easily compete with the best in any city. And I appreciate the inventiveness in certain aspects (e.g. the gari made from ginger root sprouts, the ayu + knotweed + mitsuba tsumami, the aji roll in place of the more common saba…). The chef and maitre d’ are friendly and chatty too, and are conversant in English from their stint in London, which is helpful for folks with mangled Japanese like me, haha.

There are some small niggles here and there — the awabi in kimo sauce wasn’t as fragrant as I was expecting, and the opening hiramasa was slightly overseasoned for my preference — but overall nothing that one could seriously complain about at this price point. The fact that one can even get awabi (and crab, uni, botan ebi, etc.) is already amazing CP.

富山市に戻って来てくれてありがとうと心から言える素晴らしいお寿司達、お料理達です。

お酒のセレクトもいい。おつまみたちもセンスも良い。 こんなに短期間で何度も伺いたくなるお店なかなかありません。 大将のお人柄も、スタッフの皆さんの接客もとっても心地よく、北陸トップクラスのお寿司屋さんになります。きっとすぐに。 大将は外国経験もある方なので、海外のお客様にもきっと喜ばれると思います。

ここまで応援したくなるお店もなかなかありません。どれだけ感動してるか伝わるかしら。

シャリとネタのバランスの良さ。私はピカイチだと思っています。 今1番人におすすめしたいお店！

I wonder if there is any other restaurant that I can say with such confidence that it will definitely become a restaurant that is impossible to get reservations for.

The sushi and food are so amazing that I can truly say thank you for coming back to Toyama City.

The sake selection is also good. The snacks are also tasteful. It's rare to find a restaurant that makes you want to visit again and again in such a short period of time. The chef's personality and the service from the staff are very pleasant, and this will become one of the top sushi restaurants in the Hokuriku region. I'm sure it will be soon. The chef has experience abroad, so I'm sure overseas customers will also be pleased.

オープンしてまだ1年も経過してませんが、食べ歩きが好きな人の間では評判になってるお店。

お誘いいただき行ってきました。

店内の雰囲気がいいですね。 ロンドンで各種のお店を経験してきた大将ならではの、素敵な調度品と料理の数々。

写真を撮りながら、料理をメモし、食べるのが大変でした。笑 久しぶりに寿司屋でワイン2本開けてしまいました。 (1人で飲んだわけではないですが💦)
