People might line-up for world famous Hot Star Fried Chicken at the wicked hour of 2AM after a night of heavy libations. But to have a mostly sober line during your tight operating hours of 11AM ~ 6PM trailing the main road where the space to stand is non-existent, speak volumes of either a) your product, or b) your hype. In this case it’s “c” for both and for cluckin’ good chicken. It’s called Yokohama Fried Chicken Cutlet Main Store. I know, a mouthful. But when you’re stuffing that same mouth with the fantastic fried chicken from here, you’ll thank me.
Taiwanese Fried Chicken, also called yan su ji (鹽酥雞), is characterised by its distinctively light crunch, ultra-crispy exterior, and signature seasoning, using tapioca starch for a light, fluffy texture. Like Korean fried chicken, the appeal in mainstream foodie culture is boneless and either in bite-sized pieces or as a giant FO fillet (popular on social media i.e., this platform!). What makes it is a signature seasoning; a dry powder combining white pepper, five-spice, garlic powder, sugar and chilli.
While some can be overkill, or overly oily and unbalanced, this one sticks the landing for all the simple tenants of good, /good/ FC – cooked well, not dry, seasoned reasonably and ear-gasmically crispy. Yokohama Chinatown can be a bit like the Vegas Strip sometimes where people will settle for the closest token thing. TFC variants are on just about every corner, but only one comes highly recommended....
