We had the tasting menu with wine pairing at Risette —around €200 per person. The food was thoughtful, the pairings were well chosen, and the service was... fine. But when you price an evening like this, you’re not just charging for food. You’re offering an experience. And that’s where things fell apart.

The dining room was freezing. We walked in and immediately reached for our extra layers—because yes, we came prepared for a summer evening, not an arctic dinner. Over the course of nearly three hours, the cold became unbearable. We actually had to stop the tasting midway because we simply couldn’t sit through another course in those conditions.

When we raised the issue with the staff, we were met not with care, but with dismissal. A shrug and a “why didn’t you say so?”—as if a paying guest should be responsible for flagging a room temperature issue in a supposedly curated fine-dining environment. That’s the point: we’re here to be taken care of. That’s what €200 per person should include—attention to detail, ambiance, and physical comfort. Not just plated food.

In the end, it wasn’t the cold that ruined the night. It was the total lack of awareness that anyone paying this much is paying for more than just what’s...

Where the soul savors and time stands still.

Rarely is the palate moved to such emotion, but in this culinary sanctuary, every bite is an echo of wonder. To visit Malta and not surrender to dining in this place would be a lament that would haunt the soul through the years.

From the first welcoming gesture, the majestic architecture embracing the space, the delicacy in every service detail, the exquisite curation of the cellar, and the symphony of dishes... here, everything is orchestrated with a precision that borders on the sublime.

The pairing is an ancestral dance, a perfect ballet where each step merges wine with culinary creation, unleashing an explosion of the senses. Textures, ethereal and bold, alongside flavors from distant constellations, transport the spirit to unknown spheres.

Sabrina, the head sommelier, weaves with her words a tapestry of knowledge, unveiling the hidden essence of each dish and, of course, the liquid history of the wines that dance in perfect harmony with them. It is a revelation, a masterclass that elevates dining to the...

After an intense two days of networking at the Mediterranean Conference centre, I treated myself to a dinner at Risette, and what a treat it was indeed! I had read online about their exceptional sourdough bread. As a hobby sourdough baker, I couldn’t pass up the opportunity. To be brief: the bread was exceptional! And that was only the start. Every one of the appetizers and dishes was created with a tremendous amount of respect for the main ingredients. No convoluted dishes, just pure flavours, perfectly balanced. Besides the food, the service is also amazing. I ended up being the last guest in the restaurant and had a super interesting conversation with both the owner and the chef on sourdough, cooking and what makes culinary experiences exceptional. They even gave me some of their sourdough starter to take home with me. I can definitely say my bread and pizzas are better than ever. Thanks to the owner Matthew and his entire team. I will definitely visit again and hope to also stay at the...

From the moment we walked in the restaurant, we knew that we were going to experience something special & this was exactly what we received. Matthew & Rose were very professional & welcoming, they took time to explain in detail about every dish that we chose & how it was cooked. For the stater we had the "Marinated tomato, sweetcorn, bresaola, mozzarella", followed by the, "Red snapper, aubergine, tomato, dashi sauce & the Angus beef, parmesan, oxtail scone, sauce au poivre, which was cooked to perfection. For dessert, we had the, "Rhum baba, local peaches, olive oil, goat’s milk ice-cream & "70% chocolate mousse, almond praline, brown butter ice-cream, both amazing. The food & the service were second to none. After our meal the Head chef Steve came and introduced himself to us, which was an added bonus. We definitely will return when we're in Malta again.

🌟 Risette: A Cozy Culinary Gem in Valletta Tucked within the elegant Casa Ellul in the heart of Valletta, Risette is a fine dining experience that feels both refined and warmly intimate. Each dish is a celebration of seasonal produce and bold flavors. From delicate starters to artfully plated mains, every bite is thoughtfully composed and deeply satisfying. Risette’s atmosphere is cozy yet sophisticated. With soft lighting, attentive service, it’s the perfect setting for a romantic dinner or a quiet celebration. The space feels personal and welcoming, making diners feel like honored guests rather than just patrons. The staff are knowledgeable and genuinely passionate about the food and wine they serve. Their attentiveness and ability to anticipate guests’ needs add a layer of comfort that complements the restaurant’s intimate vibe.
