I visited a few places and there were everything from just a simple Breville machine to real espresso machines, but with baristas lacking training, etc. But I was totally pleased to discover Café El Parmar, which for a coffee enthusiast like myself, is the real deal. They own a coffee farm in Chiapas, from which their coffee comes. They know how to roast for the best flavor profile. They have special limited productions, washed, natural, honey process. They have various methods of extraction and I would recommend you start with an Americano as it is their blend of two beans and then move on to try some of the specialty roasts. For serious coffee geeks, this might be one of only two “must visit” coffee shops on the island.

The cafe is family run and serves coffee roasts grown in Chiapas on various family farms. They shared with me aspects of the cultivation, preparation, and roasting process. It makes you really appreciate the cup of coffee when you learn all the work, heart, and soul that goes into it. The beans are hand-picked and need to be carried on foot for some distance from a number of the fincas. They are very knowledgeable and friendly baristas who take pride in what they do.
