I dont often find a place here really worth plugging. My wife and I have lived here for 4 years. We have eaten at a lot of places. Most are quite mediocre. Tonight we were surprised. Le Bistro. We must've walked by it a thousand times. Tonight we went there. Ambiance 10/10. Service 11/10, food 9.75 out of 10. They started us with a bread and cracker selection and our drinks. She had passion fruit, I had a few glasses of Merlot. We ordered appetizers and my wife had the green salad but really it was loaded with surprises and the croutons were great, crispy yet crumbly. I started with lobster potstickers. They were plated over a wonderful sauce. At first I was skeptical because I thought they would be crunchier. Then I cut one in half and took a bite. Wow, the flavors were amazing and the texture seemed to be perfect for them. My wife had Cornish chicken for her main and it was tender, juicy and flavorful. Ok this is where the .25 is lost. I ordered the Filet Mingon south of Med/rare knowing damn well that I haven't had a great steak anywhere in Vallarta. I had low expectations and it delivered on them. I'll say that it probably could have passed for med rare somewhere (probably here) but a bit too much. It was drey and tough. I ate all the sides. They were awesome. I left a little over have of the 4or maybe 6 oz. Steak on the plate. This is where service gets an 11. The waiter came and asked how was the steak. I was honest that it was dry and tough but assured that it was not a problem. He apologized deeply and insisted that he bring me the short ribs dish and said something about the quality of the steak not being great and again apologized. I declined but he again insisted. I accepted it. WOW! It was nothing short of excellent. I must say the overall experience was excellent and we were discussing when we are going back before we finished.

My companions raved about their dishes as well, and we all agreed that the portions were generous and the presentation was stunning.

Food pretty good, couple things weren’t super like unsalted onion soup but all the mains & deserts were amazing.
to be frank, I wouldn’t go there just to eat if it was for the food only but the experience overall is highly recommendable.
Service was outright bad.
Very long period without touch ups, avoided eye contact, always had to ask to order stuff, server swore habanero drinks weren’t spicy, they obviously were.
Forgot twice to bring qr code for wifi
Said the green tea was decaf, asked if he was certain, it wasn’t.
We were periods without water, had to ask for new bottles everytime.
Some more training needed for him, especially when he very confidently ASKED 20 or 25% tip when the check came as if this were the only two mandatory options. This will turn off anyone who doesn’t like confrontation from ever coming back.
