Edit: I gave this place another try today my usual order in any coffee shop flat white and croissant, the man that served me seemed to have an attitude. Coffee was good again a little cold croissant was heated in the oven. Completely unnecessary in my opinion. When I got the check he said how was it 3 stars in a very rude passive aggressive way. I’m not afraid of confrontation and I think my initial review was very fair. I tipped on both occasions. My barbershop in England has a flawless 5 star rating because we welcome people’s critique we don’t shrug it off like we are better than the costumer in some passive aggressive cowardly way. If he had approached me about the review with some sincerity and challenged it with some character then I would likely have chanced the review for the better. But instead it’s clear his ego was a little hurt. This place had allot of potential as specially as the area has very little over average coffee shops. Put this place in Mexico City and people wouldn’t bat an eyelid. A word of advice to the owner is to consider that people aren’t always going to blow smoke up ones arse. And as a business owner it’s more important to listen to the reasonable negative criticism than to float you ego off the positive. Non the less I wish him all the success.
I want to offer an honest and fair review of this place to show areas of improvement. Firstly the place is definitely above average. The dining area is pleasant. I had a late, croissant and a roast beef sandwich. Late was good but definitely cooler than expected, (I understand that the milk should be cool but this was more luke warm) I may have sat around for a couple of minutes before I revived it.

Beef sandwich left allot to be desired, it is titled roast beef sandwich but I’d had more turkey than beef. The bread was good but toasted in too much oil making the bread greasy.
Toilet was quite dirty and smelly, at least the men’s toilet. Ofc I can speak to the woman’s.

Read moreAwesome coffee, up there with Tierra de Cafe and Barretto - our two other favorite coffee shops. I always like to ask about where the cafes get their beans from. From what I could understand, Tinoc gets their beans from Zihuatanejo in the state of Guerrero. This was a first for me. All of the other coffee shops we've been to in Mérida get their beans from Chiapas, Oaxaca, and occasionally Veracruz. I think the waiter was explaining that the processing of the beans was minimal and so that's why you get a lot more fruity taste in the coffee. We agreed. The coffee in terms of fruity notes was comparable to Tierra de Cafe. Both places have very fruity coffees without being sour and are both extremely smooth. Very easy to drink without milk (always try the coffee without milk first). Barretto has a darker roast (but manages to avoid being burnt) where you lose the fruit notes, but you get a very bold rich COFFEE taste. All three are excellent and are fun to compare if you consider yourself a coffee aficionado.
Tinoc Café also has a wide food selection. I ordered the delicious French toast, which was thick, creamy and topped with a generous serving of berries, apples, a big slice of bacon, and a sprinkling of sprouts - all served with a side of honey. The environment is trendy/hip cool space both indoors and outdoor courtyard seating.
Finally, it's definitely worth noting that the service was outstanding. The staff enthusiastically greets you with big grins on their faces. The young man who waited on us asked if we wished for him to speak "en español o íngles". We said we wanted the Spanish practice if he didn't mind speaking slowly, which he happily obliged. He even very patiently encouraged my friend to repeat whatever I said since she is super shy about practicing her Spanish with the locals. We were very grateful for this extraordinary kindness.
