Chef Alexis Ayala, known more for his famous Taqueria Alexis, opened the gourmet Restaurante Pargot next door. Pargot is a shrine to Chef Ayala’s culinary vision and creativity. His clam stew alone is enough to make a visit to Pargot a must. It was one of my “dishes of the decade,” another culinary remembrance making my 75 years on this planet worth it. However, every aspect of Pargot, from its gorgeous, modern design, to the elegant service, made customers feel special. Pargot is a great restaurant, on par with the best of CDMX. The chicken wing croquettes, served on a sculptural branch, akin to a presentation at the acclaimed Alinea in Chicago, tasted fantastic, unlike any “game day” chicken wings. Our grilled octopus was the only miss of the night. We thought it was just okay. The stuffed Chile dessert knocked my socks off, but my spouse thought it was nada. Prices were a steal for a meal of this quality; about $85 American dollars each including two appetizers, two entrees, one dessert, two glasses of wine, and two cocktails. We were lucky enough to sit at the chef's table. It goes without saying that this was one of the best meals I've ever had. The dishes were creative without being pretentious. It showed they wanted to keep fundamental dishes and elevate them with unique flavours and presentation. I was mind boggled how they even came up with these combinations. My recommendation is tell them how hungry you are and let them decide. You won't regret it. Also don't miss out on the wine, it's truly fantastic and accompanies the dishes beautifully.
They are just 3 weeks old so you can still get a table, but I'm not so sure that will be the case 6 months from now. We will be back next year when we visit...

I would agree with other reviewers that the chicken croquettes were disappointing (bland and needed some acidity to cut through the richness, but were presented beautifully), and there were one or two other dishes that didn’t blow us away. Surprise of the night was the sweet stuffed chili dessert. Easily one of the best puddings we had in Mexico and perhaps ever. Are we being a tad generous giving 5 stars? Perhaps, but I think the high points, like the crab, the stuffed chili, among others, merit a high score on the food front, and we really liked the service.
