This place is a hidden gem in Roma.
While walking around the neighborhood with a friend, we stumbled upon this tiny yet eye-catching shop. Despite its small size, it's hard to miss—their pink branding and creative decor really stand out.
The owner, Matt, happened to be there during our visit. An American, he shared how he and his girlfriend from Mexico opened this place as a passion project. He enthusiastically explained how they came up with the idea—I had never seen or heard of shaved ice cream before—and how they spent countless weeks in their kitchen perfecting the flavors and products. They even collaborated with a chef who used to work at Panadería Rosetta to fine-tune every ingredient. Matt's passion was evident in every word. They make the "shaved ice cream" themselves, after a lot of trial and error to achieve the perfect texture. They also source ice cream balls from a local artisanal shop and make chocolate from scratch, toasting the cacao and all.
Matt told us about their seasonal flavor—pan de muerto—which tasted exactly like the delicious fall pastry. The ice cream came with a handmade chocolate stuffed with pan de muerto ganache. It was both delicious and creative.
They also offer hot chocolate, again made from their homemade chocolate. He mentioned they've recently started making homemade Baileys marshmallows. How do you even come up with that?!
