My partner and have visited Tristán twice now, and we absolutely love it! It only recently opened, and I definitely recommend trying it out. It's nouvelle cuisine (I am told), and serves classic international dishes but adding Asian, French and Mexican flavors. We were surprised by everything we tried. The corn ribs were amazing, and the lamb burger, mussels in curry, and coffee flavored ribs were delicious. For non-meat eaters, the vegetarian options looked very promising. If you have a big appetite, though, I would definitely recommend ordering 2 or 3 courses. The decoration is fun, tropical plants and flamingos meet the collector’s cabinet of curiosities. However, I would bet you $20 that the chef was not in the kitchen when I went to eat on Sunday night. A mushroom plate was overly salty, some of the bread was slightly stale, and, most of all, the paella was, quite disastrous. It had been moved around very roughly, breaking some rice grains and filling some of the mussels with rice. It was served as one would serve staff meal. Just dumped ala Oliver Stone's gruel.
